Don't forget use your precise aiming when going long range. I have bismarck and would enjoy tirpitz I'm sure. Both ships really support out of the box game play. I went double rudder mods to hunt dds and dodge torps, very effective with sonar.
The Tirpitz is my favorite ship. I love brawling, which is hard to do in most other tier 8 BB. Except the Bismarck. It not a sniper, but when u need them to hit at longer ranges u have precise aiming an do single shots. Tirpitz, Roma ,bismarcks, NC are my ships . Roma’s my second favorite. The only thing I hate about it is how flammable it is 🔥🔥🔥
For me the secondaries of gascogne is superior to the Bismarck and tirpitz. Yes it has worse range but it fires HE shells that can set a lot fires which is more useful against bbs and it can fire 9 shells instead of 6 the Bismarck has, 6 of gascogne's secondaries can be fired forwards which is helpful when bow on against destroyers.
I noticed it too, but HE is more effective against DD. His secondary armaments are AP by default and his auto secondary is HE by default. He switches based on who he is about to attack but when he went into the brawl, he went ahead and used the HE that was loaded to get the first Salvo out so he doesn't double his reload

The extreme range AP shots can be a disappointment
I don't have Tirpitz but I find Bismarcks dispersion disappointing 😢...
T8 I'm all ROMA or my good ole NCAROLINA... I'd go Monarch before Bismarck...

The best way of killing DDs in the Tirpitz is to stick with cruisers.
