  • Phyllo Strawberry Tarts
    Phyllo Dough can seem intimidating but it’s really not a big deal and is JUST wonderfully flakey, crispy and delicious. If you’ve ever had Baklava (pastry with nuts and honey) or Spanakopita (pastry with spinach and feta) that crispy pastry is Phyllo Dough. I had some in the freezer and I had leftover fruit so there ya go🤣😂
    Here’s what you need:
    Pastry:
    Phyllo Dough - one package (it comes 2 to a box) thawed. You can thaw overnight in the fridge, best way, in the microwave for 60 seconds or on the counter for about 2 hours, which is what I did. There are people who firmly believe that only overnight in the fridge will work but I have personally done all 3, the fridge, the counter and the microwave and they’ve all worked for me!
    1 stick of butter melted
    1/4 cup sugar
    Cream topping:
    I used my fruit dip recipe which is
    1 small box (3.4 oz)
    1 1/2 cups milk
    1 cup Greek style vanilla yogurt
    1 cup Whipped cream (Cool Whip works)
    OR you can buy Philadelphia Cream Cheese Cheesecake filling which is great and will work perfectly for this too!
    Fruit topping:
    Slice whatever fruit you like, sprinkled with a little sugar, strawberries, blueberries, peaches, mango, bananas or any combination.
    Here’s what to do:
    Preheat your oven to 375
    Line a cookie sheet with parchment, once you have your size put the parchment on a cutting board to assemble and cut. You will lift it back onto the cookie sheet once cut.
    Lay out your thawed stack of Phyllo dough and dampen a towel or a few paper towels and cover the dough. You do NOT want it wet, it will make the dough gummy, just light dampened. This dough will dry out quickly so you want to keep it covered each time you make a layer.
    Separating the Phyllo take 2 sheets and place it on the parchment. Gently brush it with melted butter and sprinkle sugar over the whole thing.
    Repeat laying another 2 sheets, individually, on top of each other, brush with butter, sprinkle with sugar. Do this one more time so you have a total of 6 layers. With a pizza cutter cut the buttered pastry into either 6 or 8 pieces. Once cut slide your cookie sheet under the parchment and space the pieces so they aren’t touching. Place in preheated oven for 20-30 minutes, check at 20, you want it beautifully golden brown.
    As this bakes make your cream or open your cheesecake filling.
    Slice and prepare whatever fruit you’re using.
    Remove pastry from oven and allow to cool.
    Top with cream and fruit
    Sprinkle with fresh chopped mint
    This is a rock star dessert, so easy but is beautiful and makes you look like a pastry chef!😂🤣I hope you try it, it’s just delicious!
