I hear what you are saying however there is massive risk of misalignment of assets if a capability model is not used. I realise this is a starting point but value stream plus capability for me should always be performed then you can fork into which problem is solved for. My thoughts.

If you do a search on the Internet, you will find a list of standard deliverables, such as capability map and value streams. However, I suggest that you understand what the business requirements are, and create deliverables that meet those requirements. For example, if your business area is interested in optimizing some process, then it makes sense to model the process to whatever detail it has to be. On the other hand, if the business is interested in crafting strategy, then it makes sense to model capabilities, so you can identify those differentiating capabilities. So I would say it depends.
Assuming that you already made a decision on getting some certification in business architecture, you might check out business architecture guild's certification program. That's businessarchitectureguild.org
Business architecture does not do business strategy. Business strategy is trying to identify why you're doing what you are doing in the first place. Business architecture is about how to do it.
You can create an EA for any business, but unfortunately I can't at this time because that's not an area that I necessarily know a lot about - other than generalities.
