You can take any value whose gcd with 160 is 1 so yes both 3 and 7 are correct answers here ( also 1 < 7 < 160) same goes for 3 as well

e = 27 (you can take any value)
Now for d
d * e = 1 ( mod 40)
So
d = 3

He did not find 23 directly as he said in video we need to found a number which when multipled by 7 gives us either 161, 321 ... And so on. So since 23 * 7 = 161 ( basic maths) we can multiply 7 by 23 to remove mod
