- Former Alain Ducasse chef Damien Leroux demonstrates a French classic - Asparagus Hollandaise with a twist by sautéing the asparagus and making the perfect Hollandaise sauce from scratch that is light yet flavoursome. For me, it’s a joy to witness someone making a ‘simple’ dish that requires many small things done right at the same time with such ease.
I don’t like Hollandaise in general, but I had Dam’s Hollandaise when he invited our family for brunch, and I thought it was incredible. The best part for me is now we all get to watch him make it.
