  • "Elderberries look magnificent, particularly when the sprays are heavy with tender, dark berries. In this recipe I poach some pears in the same way I always do - gently with plenty of aromatics. As the pears cook, the berries give up, break and burst, staining the pears a vivid red-purple." - Gill

I've always been told that elderberry stems are toxic, but I see you making this (beautiful) dish by cooking the berries on their stems. More information please?

Only the blue variety (also identifiable by the white surface coating, similar to blueberries) is good for eating, although they require cooking, because the raw berries contain a cyanide-like chemical. Green, unripe, or bright red elderberries are bitter and possibly toxic, even when cooked.

Right, but I've always been told that even the edible varieties (and there are more than one, though they all have blue to black berries) contain toxins in the stems that should not be ingested.

Read carefully what I wrote you: "they require cooking, because the raw berries contain a cyanide-like chemical"

I did read it carefully, thank you. I was told the stems should not be ingested at all, cooked or raw.

A quick look around the internet and I see no where that says cooked stems are safe. Now, in this case they aren't eating them, but still it would be best to leave them out, IMO. The info was the same for all the varieties.

Seems like the dish could use one more element, like a scoop of ice-cream.
