3 Ingredient Vegan Mac & Cheese! Is it any good?

  • We've seen a fair few "3 ingredient" recipes here on RUclips, so we thought we'd see what we could do with 3 ingredients. We chose one of our favourite meals: mac and cheese. This was a complete experiment, but a fun one at that!
    This vegan mac & cheese is simple, cheesy and delicious! We have managed to create the simplest mac & cheese possible using only 3 ingredients, nutritional yeast, oat milk and macaroni. This is the perfect quick lunch or a tasty treat to perfect a delicious dinner.
    Ingredients
    200g macaroni pasta
    500ml oat milk
    50g nutritional yeast
    Salt and pepper to taste
    Before you start
    Kettle boiled | Saucepan | Frying Pan
    Method
    Cook the pasta | Pour the water from the kettle into a saucepan and bring to the boil | Add the macaroni pasta and a good pinch of salt to the pan and simmer for 9 minutes
    Make the Sauce | Add the oat milk to the pan and bring to simmer over a medium heat | Once the oat milk is simmering, add the nutritional yeast and stir constantly with a whisk until it has reduced by three quarters | Taste the sauce and season to perfection with salt and pepper
    Combine the elements | Drain the pasta, add to the pan and stir into the sauce | Spoon into bowls and serve immediately

    Honestly I think adding a bit of lemon juice and some margerine/olive oil takes zero effort being ingredients everyone usually has at home, and that would really round up the dish, in my opinion. 5 ingredients instead of 3 is not too bad, right? :p

      Yes! A splash of olive oil for a glossy smooth finish to the sauce. A dot of mustard to lift the cheesiness for another slight variation. I love recipes with few ingredients and I can’t wait to try this with the mods you suggested.

    See, I wanna try this a different way. Just cooking the noodles in the oat milk so the sauce thickens as the pasta cooks, add nooch and seasoning, and call it good. That way the second step is eliminated, and all you have to do is add oat milk as you need

      That's a great idea! Two birds, one stone. And I bet it'll be even creamier due to the added starch from the pasta 🤤

      This is a great little recipe. I had been researching vegan mac and cheese every recipe I found involved 0:02 pureeing all sorts of vegetables carrots potatoes cauliflower! I just thought there has to be a better way. It all seemed so unnecessary and way too much. Thank you I love this little recipe. I browned some onion in plant butter and added a teeny bit of flour to help thicken it salt and pepper of course and I also added dijon. This was my first experience with noochy. Got to say....very pleased with the result. I do not know if it was the addition of the Dijon but the flavor was very close to gruyere. Super good and super simple. So glad I discovered your channel.

    Such a helpful video. New vegan (but long term vegetarian) and cheese and it’s use in cooking is what I’m missing the most … this could easily become a very important comfort meal. Need to try it immediately! Thanks for the video - as always

    And all this time I was struggling to make a simple Mac and cheese. If you’re lying to us about the flavour here dude, we’re gonna come throw the Mac and cheese all over you. lol. At least, I will. lol 🌱

    I can see how that would work, nooch is quite 'cheesy' tasting, and blends well into a sauce, and oat milk is very creamy, so..... instant mac and cheese !

      If there was a substitute for nooch then every vegan cheese recipe wouldn't Call for nooch now would it?

      @sprinkles351 well they're asking for a substitute for the one thing that doesn't have any substitute. It's annoying how many ppl are too lazy to just get the proper ingredients and always ask for substitutes

    I saw someone make oatmilk 'yoghurt' recently and it was really just boiled down oat milk so I can see this being ok. I'll try it next time I have no cheese and no potatoes and carrot!

    does it matter if the oat milk is sweetened vs unsweetened?

    Hmmm....I've used coconut milk as a Mac and cheese base but not oat milk.

      Ok... then use Coconut milk for that heavy coconutty flavor you enjoy in your Mac and cheese 👍

      Was just commenting on not having seen oat milk used before though, not sure why you felt the need to leave such a passive a gressive response.

    Since nutritional yeast contains the same elements as MSG, it's unfortunate it's used in SO many recipes for those of us who are allergic. Sorry guys, otherwise, you have terrific vids. 👍

      I'm going to try it with white miso. It didn't really work for me with the noochbut boiling down the oatmilk is a great way to get a creamy sauce.

      Very doubtful that you're allergic to MSG seeing as it's found naturally in a plethora of foods AND is produced inside our bodies.

    I tried this recipe, and it is not very good. It does not taste like macaroni and cheese at all. I suppose if you are used to eating a very austere diet you might find it tasty. I'm putting my leftovers in the compost bin, rather than subject myself to this dish again.

      Salt and pepper don't count as they are imperative to every recipe, they don't require a special trip to a specialty store, they cost pennies in the quantities used, and everyone has them readily available in their kitchen. They're generally called "freebies" in these few ingredient recipes. Cooking oil and water fall into the freebie category as well.

    I couldn't get the sauce to thicken, so I added 1tbls of polenta powder and it was delicious! Thank you because this is so easy with few ingredients and tasty great.😁

    just made this, was good but reduced it to long. will try again, maybe with some suggestions.

      Add 1 tablespoon polenta (or flour I guess) and it helps with the thickness.

      ​@@denisehastings3015 they said they reduced it for too long which means it came out too thick so polenta powder would make it even more thick....

      If you reduced it for too long and it became too thick then just add in some pasta water as you add the noodles into the sauce.

    I'm pissed with you Bosh, because you did another version of this recipe in a previous video and you made it unnecessarily complicated with tooo many ingredients. This was all I needed to get my mac n cheese fix

    seems like it would have that gross nutritional yeast taste but I will try making a small batch to test it out. maybe the oat milk will change the taste?
