I think if you buy Romaine heads instead of the bulbs (the package in your video seems to be the bulbs) the outside leaves are larger and can wrap around easier.

Yes you could absolutely do that! I like the crispness of these smaller ones, making them more of an appetizer cup, but the larger leaves would be great too.😄
