Hi Kayla, as I sit here with my own very hard realties & struggles on my farm, I’m finding peace watching your videos. Even though we are both harvesting and preserving at the same time, our daily routines are different. I dont know how you manage to keep up with recording, harvesting, preserving and tending the garden as well as the animals, and still look cute !! I run 40 sheep & goats, chickens & gardens,..cant seem to keep up. And you manage to share all your endeavors good or bad. I can only imagine how hard it is to perform at all times. Farm life is tuff. It certainly is for me. But it is sacred to watch you open your small private life and turn it into such beauty. I said it once and ill say it again,.. keep up all your hard work, thank you for sharing it with all of us…❤❤❤

I am new to your channel. Oh my goodness I just died and went to the perfect garden. The colors, the beautiful plants, the everything is so perfect. Thank you for giving me a sense of peace.
I am so amazed of how healthy your fruits vegetables and flowers are. It is a struggle to keep two peach trees from disease here in Eastern Pennsylvania! We use neem oil and the copper spray and we lost all of the fruit and it's a struggle to keep them alive
Thank you Kayla for your kind words. The farm is like a ray of sunshine, on a cold winters day. The Dahlias and Zinnias, roses and other varieties of flowers are just stunning. The big ox-heart tomatoes and the Italian Romas are gorgeous. I could only imagine the flavor bomb you experienced , eating those perfectly ripe tomatoes, with a sprinkling of salt. YUM!!!😃 I just finished a batch of Green Tomato relish. It’s absolutely beautiful. And I’m looking forward to spring here in Australia. And the new season Asparagus. Which I’m going to preserve. Para conservar durante más tiempo la salsa de tomate en el frasco, se solía hacer mucho acá en Latinoamérica para conservar distintas verduras como berenjena al escabeche, etc.
There's a lot of things that I would do differently in this process for simplicity and time. 1. I would use a Victorio tomato juicer. No boiling required. Just wash and cut your tomatoes into manageable pieces. Feed them into the hopper and turn the crank. Out comes tomato juice through the chute. Tomato skins and seeds exit the other end. ( Note: different screens can be used for grapes, pumpkin and apples) The tomato juice still needs to be reduced by boiling to make sauce, ketchup, pasta sauce etc. Salt that has not had iodine added should be used as a preservative. ( Canning salt) . To answer the question why boil twice. The first time is to either loosen the tomato skins for easy peeling or to remove the water when making sauce. The second time is t kill and bacteria that might be present and to make sure you get a good seal on your jar lids. You will hear an audible "pop" when the kids seal.
