This is a hit for my family as a quick and easy dinner when I am short on time. I doubled the recipe and added freshly cooked chicken and broccoli at the end and mixed it all up. Delicious! Please add more to this series! Thank you!
We tried this last week. It was really good. The only thing I did a little differently was to add some of the parmesan directly to the sauce. Truly this is a great recipe. Thanks so much.
I think I'm going to try this. It looks good and seems pretty easy. Thanks for posting.
I take my better than bullion and mix it in my water and it all comes off the spoon. It is so much easier
Good idea!
Mixing it in warm water helps too...Just do it first and then let the water come to room temp. That's what I normally do as well.
Looks easy and delicious!

This is just a base recipe. As is, it is bland. It does make quite a bit.
I added frozen peas prior to cooking.
It was liquidy even after adding the sour cream. I added about 2 cups of shredded Mexican cheese and my favorite pasta spice seasoning from Trader Joe’s called Soffrittos. About 2 teaspoons. It comes in a small square jar on the seasonings aisle. It’s also great on any type of potatoes. The cheese made a nice thick sauce and the added Soffrittos seasoning took away the blandness. I have enough leftover I will add broccoli tomorrow.
I think this could easily feed 4.
These college recipes would feed my husband happily. But I would really love to see some vegan recipes for me. Plus I need him to eat better with me so he'll be around longer.
Google vegan Instant Pot videos and/or recipes. I'm sure you will be able to find more than you can use.
Thanks! I’m going to fix this tonight since I have everything for the recipe…just one comment…I assume the Better Than Bouillon was the chicken flavored one…I have a few others (beef, onion, ham etc) in my refrigerator that I currently use because they are so easy but I’m sure you told Megan, beware…don’t use more than teaspoon or tablespoon(whatever the recipe calls for) as I did the first time I used one…they are concentrated so super super salty!!🤭. Good luck, Megan!
Sorry, Reagan…called you Megan in error! My only defense is that I was surprised at how much you look like and even sound like my niece Megan…she’s also a go-getter!!!
I made the same mistake on my ham and split pea soup. So salty I had to toss it.
😋
😊
They actually have measuring spoons for a pinch to be precise.
I did not know that!
Question...was the chicken that you used, precooked or raw?
It was rotisserie chicken so it was already cooked.
Yep it was cooked
a really simple and good mac and cheese in the instant pot
equal weight noodles and cheese and a can of evaporated milk for every 8 oz of noodles (optional, add frozen veggies or other additives)
cook the noodles and addititves for 4 min (add enough water to just cover them) and then stir in a can of milk then add cheese (when it gets too think, add in another can then add more cheese)
a regular 6 qt instant pot can make up to 2 lb of noodles, so you can probably do 1lb in a small one
it seems very full once the noodles are cooked, but the noodles will accept the milk and cheese without needing more space
Thanks! I’ll give it a shot
I have another College cheating scandal recipe for Reagan.
Let her know:
Linguine + chicken broth + chicken thighs + cream-of-mushroom soup
= Poor Man's Chicken Marsala.
(Alternatively, scrap the pasta and use potatoes to make garlic-rosemary mashed potatoes.)
(She can add some Marsala wine or maybe cream sherry to it when she's 21.)
I tried this recipe also. It was not something I would make again. Too dry and not at all what I expected.
