It is so good to see that across the Caribbean and diaspora, we still skim the fat off our soups, wash meat and have some kind of herby - garlicky, fragrant seasoning we put on our meat. West Indians have a corn and provision(root vegetables) soup that we can do vegetarian or with any the meat. I love sancocho and make a great one with oxtail but the Dominican place I order it from has pork ribs and chicken. I eat everything and thank God I know enough Spanish to follow the conversation and laugh the whole video without putting up subtitles.
