    Super, we first coat the midis with haralu ennae or the castor oil, for this much u add 2 spoons of it cost it n then start the marinating n then the final prides, you can really feel the difference in flavour n taste. Use thothapuri midi ones, Wav they r.

      Only salt is used to preserve the pickle. No other preservatives are needed for this recipe.

      These are regular red chillies. Namma kade "ಊರ ಮೆಣಸು" antare. Avoid Byadagi Chillies.

      Mamooli mavina hannu Kashi maavu. E.g Badami, Raspuri, Mallika etc. Uppinakayi ge use madudu kaatu/kaadu maavu. E.g. Appe midi, Jeerige midi etc. Navilli balasiddu jeerige midi.

      Manjesha avre, These are the wild variety of Mangoes (ಕಾಟು ಮಾವು), which are different from the Grafted Mangoes (ಕಶಿ ಮಾವು). The specific one used in this video is called Jeerige Midi. This is known for it's unique sap aroma.

      VK, To prepare any pickle, Salt Water is prepared upfront and only that is used (You can check the step at 2:06). All utensils and hands have to be completely clean and dry while making the pickle to make sure the Pickle doesn't get spoiled by Fungi.
