Step 1: Pulled Pork
Ingredients
3 Tbsp salt
3 Tbsp brown sugar
1 Tbsp black pepper
1 Tbsp paprika
1 Tbsp onion powder
1 tsp dried mustard
4 lbs boneless pork shoulder
1) Preheat oven to 325 degrees then mix salt, sugar, and spices together.
2) Place Pork in a large dutch oven or any deep-ish roasting pan and use your hands to rub the spice mixture all over the flesh. Cover with foil and place in the oven for 4 hours.
3) Remove the tin foil, turn the heat to 400 degrees, and continue to cook for an additional hour, until the pork is nice and brown and crusty looking.
4) Remove from the heat, allow to cool, then use a fork to shred the meat.

Step 2: BBQ sauce
Ingredients
½ cup tomato paste
¼ cup yellow mustard
1 cup dark brown sugar
1 cup apple cider vinegar
1 Tbsp spice rub
¼ tsp black pepper
1) Heat all the ingredients together in a small sauce pan, and allow to cook for 10 minutes, until the mixture is thick and syrupy.
2) Pour BBQ sauce over the shredded meat and mix until desired consistency.

Step 3: Twinkies
Ingredients
1 cup AP flour
1 cup yellow cornmeal
⅓ cup sugar
¾ tsp baking powder
½ tsp baking soda
¾ tsp salt
3 eggs
1 cup whole milk
6 Tbsp melted unsalted butter
3 Tbsp honey
1 portion saucy pulled pork

1) In a large mixing bowl, whisk together flour, cornmeal, baking powder, baking soda, and salt.
2) In a second mixing bowl, whisk together eggs and milk. Add the wet ingredients to the dry ingredients and whisk until there are no lumps, then add in your melted butter and honey and stir to combine (whisking in the honey and butter separately will stop those ingredients from seizing and creating an inconsistent batter).
3) Grease up a twinkie pan (use a muffin tin if you don’t have a twinkie pan… most of you probably don’t have a twinkie pan we’re guessing) and fill each about ⅓ of the way up with batter.
4) Take a small handful of pulled pork and gently press it down into the batter, making sure to leave large chunks of saucy meat, then pour an equivalent amount of batter on top. The batter should only come about ⅔ of the way up the pan.
5) Bake at 375 degrees for 20 minutes, or until a toothpick comes out of the cakes cleanly.
6) Allow to cool for 10 minutes, then gently remove the cakes, dip in excess BBQ sauce, and enjoy.
