Scottish Cullen Skink Recipe | Creamy smoked haddock, potato & leek soup :)

    Hello folks! A very warm welcome back to What’s For Tea :) for tea tonight I’ll be making Cullen Skink…This is a thick , creamy soup made from smoked haddock and potatoes.
    This soup is a local speciality, from the town of Cullen in Moray, on the north-east coast of Scotland. It’s served as an everyday dish across Scotland.
    This is absolutely delightful. And by far, my favourite soup :) Everything I used will be listed below,

    Makes enough for 5-6 people
    ShoppingList:
    2 medium potatoes - I used around 400g (14 oz)
    300ml (10.5 floz) Water
    400ml (14 floz) Milk
    100ml (3.5 oz) Single cream
    1 leek sliced - I used 200g (7 oz)
    2 tablespoons of butter
    A small onion chopped - I used 100g (3.5 oz)
    400g (14 oz) un dyed smoked haddock - which is about two large slices
    A good handful of fresh chopped parsley - around 2 tablespoons
    Salt & pepper to taste

    Let's Cook!
    Melt butter in a saucepan over medium heat, then add onion and fry gently until starting to soften, add your leeks and soften slightly. Cook for about 5 minutes but do not allow to brown. Add potatoes and water and bring to boil. Simmer for 10-15 minutes.
    Meanwhile in another pan, cover the haddock with the milk and cream, cook gently for about 8 minutes until just tender.
    Flake gently with your wooden spoon into bite size pieces. Give it a good stir.
    Add the milk and flaked fish to the other saucepan containing the potatoes and other ingredients and cook for a further 5 minutes.
    Season with salt and pepper and add in the with chopped parsley.
    Serve with crusty bread and butter.

    You know, I tend to keep a pressure cooker of potato and leek soup on the go during the winter, and it's never occurred to me to turn it into cullen skink even though I adore it. Well, that's soon rectified! Many thanks Cheryl - inspiring and appetising once again. :-)

    Fell in love with Cullen Skink while touring Scotland years ago. Of course smoked haddock is near impossible to find in the US but I found a source (although very, very expensive) that ships 2 day. It was worth the expense! Will try making this again with other smoked white flesh fish. Smoked Salmon would be good too.

    My fav also, my gran used to cook what we used to call 'Yellow fish' lol Which is dyed smoked haddock. I adore Cullen Skink & when I lived in Livingston & Angus it was eaten at least once a week mmmmmm YUMMM

    Visited Scotland in October 2018 and had ma first encounter with this fab dish and was absolutely mad about it - made it when we had friends coming for dinner the night before Christmas Eve and so were they! So much actually, so it has become a tradition now, every 23rd of December we’re havin’ Cullen Skink, made after your old recepie 🥰 Don’t know how I’ll manage this year though, as it’s become very difficult to get smoked haddock here after Brexit 😞 Loadsa luv from Denmark

    I have got to track down some smoked haddock to try this someday! I was in my 40s before fish finally became food to me, but I do love me a good potato soup, and you could smoke an old boot and I'd happily chow down on that...

    Not gonna lie, every scottish dish I've ever seen and tasted has been amazing. I made Cullen Skink a while back (I had to use a touch of liquid smoke as I couldn't find any decently smoked fish) and it's about time to enjoy it again!

      Smoked haddock from Canada is 93 dollars for 2 lbs thanks for the tip about liquid smoke

    I’ve just finished my breakfast but still my mouth is watering! I’m definitely going to make this, I don’t know why I haven’t! I also love smoked haddock poached in milk with thick slices of bread to soak up the milk.

    Learned this one from my Gran - I first made it age 5 - 70 years ago! To make this luxurious when dishing up, use some thin curls of smoked salmon then garnish with a light grating of cheddar and chopped spring onion - looks seriously expensive!

    Omg that Cullen skunk looked amazing my family is from Ayrshire it used to be a regular meal ! Fish is so expensive nowadays tho

    This soup looks sooooo good. We would call it a chowder here in America. I will have to use smoked trout. It will be a little darker and drier so I hope it works. I just called a few fishmongers near me but they don't have the haddick unfortunately.

    From Scotland, ... all our national dishes are just about using what you have. Survival was more important than sourcing ingredients. Fish and meats, - you could only combine that with the veggies/dairy that you had or could afford in good years or bad? Pertinent around the world to this day ...!

    I made this for the first time a few months ago. I used a slow cooker, smoked trout, a tin of sardines, and dill and thyme instead of parsley, but it was soooooooo good. Another thing you can do to thicken it up right away is, once it's done, take out all the big pieces of things, but leave in a few chunks of potato. Then blend them into the broth with an immersion blender until smooth, add the pieces back, bring back up to a simmer, and serve.

    Hmmm, beautiful, haddock is one of the tastiest fish anyway, but once smoked & paired with the other ingredients its just heavenly. Yours looks very tasty & inviting. I bet it would also be nice as a chilled soup eaten outside in summer.
    I was playing a few weeks ago & made a version with some scallops I smoked, I then sprinkled on some toasted oats that I'd mixed with sea salt, pepper & flaked dried seaweed. I hadn't smoked the scallops as heavily unfortunately but their sweeter flesh did bring something to the party, but I was really pleased with the savoury crumble on top of the creamy soup for texture.

    Hi Cheryl, thanks for this recipe, it looks amazing and will be especially good as the weather turns to winter. Like everyone the current energy prices are hurting me so I've invested in a small Slow Cooker in the hope it will be more economical. I live alone so easy meals like this are welcome. I assume this one will be OK if made in the slow cooker but my main question is do you have any other ideas for slow cooker or one pot economical meals.

    EDIT... I found lots of your suggestions for slow-cooker recipe's. Thanks again for the channel.

    Looks good :) We come from Buckie along the coast from cullen and my recipie is similar but without the leeks & parsley, I also use tinned milk instead of cream 😉

I love your videos and have been looking for an original Stories recipe for so long. I can't wait to try them as I remember my mum's friend cooking it for me when I was a child.     Living in the Midwest US, gotta admit, I have never really cooked with fish. Every time I see a dish using smoked fish, I kinda shudder. There are specialty stores where I could buy smoked haddock, but the prices would make it cheaper to just fly to Scotland myself. Same with lamb, currently looking at $20/lb. That's if we can even find them in stores, most don't carry either. Another great recipe, love your channel! :)

      Stacy, I too live in the Midwest. I’m lucky that my sister in law and husband live in the country and the fellow down the road runs the local 4H lamb project, so every year we split a whole lamb. A lamb that has literally been hand raised by doting pre teens to show at the county fair. The initial investment is a bit high, because you pay for the lamb and the butchery. It works out to About $7/lb, but for that you get the best bits (loin chops, rack of lamb, shanks) that cost a small fortune, but you also get whole (or cut up) legs, ground lamb, stew meat and some small roasts. A half a lamb lasts my wife and me a whole year. And smoked Lake Michigan whitefish? Oh my. Almost worth driving to Duluth Minnesota just for that!

    My mom used to make something similar but added hard boiled eggs. Is that more like a kedgeree? It was delicious and definitely brought back memories. Regards from western North Carolina.

    Now, this is one i'd really like to attempt to make, but can't seem to find smoked haddock in my area of the States. Thanks for the tip for looking for another type of smoked white fish.

      It's really just for the smoked flavour Thom :) so I think it would be absolutely fine to use another smoked white fish.

      Like Cheryl says other smoked fish works, I've also used smokies or kippers [really need to get all the wee bones out of a kipper first though]. Though as they tend to be heavier smoked you can use less of them & bulk it out with good plain white fish. The smokies & kippers can make the soup a little oily though. Is smoked cod available in your area? I know its common in some parts.

      @@thommurphy1721 I live in the Midwest. Just called a few fushmoners and no luck with haddock. Trader Joe's does have a really good smoked trout so I am going to try soup with that.

    In fairness, that’s not really a soup is it? It’s more like a stew. If you are making a soup I think it needs more liquid, even a chowder has a bit more liquid than that? I’d be tempted to either use more milk and cream, or, use much less potato. But it still looks delicious 😋

    Cullen Skink ..... what a name! Doesn't 'sound' very appetizing does it? Not as charming as 'bubble & squeak'..... it sounds like it's made from eels & seaweed by wild men of the shores.
