    Wonderful video, but I would just give you two tips. First tip don't move the steaks around once you have them down on the fat. Let them caramelize first and then flip. My next tip would be the wine choice for the foie gras, which would be a Sauterne. 100%. I shall subscribe! So much fun to watch! Happy holidays

    I don't like beef liver but I love foie gras. Thank you for the video. Would you recommend serving it as an appetizer or a meal? My mother on law.is coming for dinner and I want to have a nice dinner and presentation.

    Question: How long did you let it thaw after taking it out of the fridge? Does it need to be room temperature when you start to sear?

      I think about 45 min after removing it from the fridge, you should let it thaw out completely but you can get away with the interior being a little frozen still. Remember start at low heat in non stick pan. Add nothing to pan the foie grass will melt as it start to cook. I add salt prior to cooking.
