Sushi chef from America here. Not to bad making rolls, and bonus points for helping out kids. However, I can 100% make double the rolls you did with what you had, 85% sure I can triple what you made if not more. Then again portion sizes are different I suppose. Sushi profits compared to ingredients are pretty good haha, none the less keep up the good work!

What about freezing to kill parasites, I catch my salmon fresh in BC but I’m nervous about eating it raw without freezing to -20 for 7 days like I’ve heard your supposed too.

That is -17.whatever celcius. In other words... at home, you can freeze your fish for a week, and remember that time period is given to ensure even a person at home with a failing fridge making mistakes will get it right, the real number is less than that but the FDA errs on the side of caution. Everything about snap freezing is better because faster freeze results in smaller crystals, less damage to the flesh, better texture result however... freeze those salmon for the week, defrost slowly in the refrigerator and enjoy your raw fish my guy

around my area it costs about 8 or 9 dollars for a simple salmon roll like that. if each of your rolls were 8 pieces you had what 55 orders of rolls? It's definitely more cost effective to make yourself especially if you don't include tip.

If you haven’t already done the shwarma and you follow the same method for assessing value you should weigh one of yours all total (maybe weight a couple and split the difference) then just weigh the meat and do the same with the restaurant purchased shwarma.
Dude, those portion sizes are massive compared to what you'd get at a normal restaurant. You could easily double or triple that; also its rare to see Philly Rolls made with the salmon on the outside, usually its inside it so it would make the salmon spread even further. You could probably get around 1200+ rolls.

one thing for the futur when you make sushi make sure to cool the rice on a big sheet (so that it has more surface area to cool ) and then the food wil be more fresh and aromatic (i picked on this when i saw the steamed containers) but absolutley amazing
For wasabi you can get those 1KG bags of powder, I have one myself, and it will most likely last me a lifetime. I could also easily devour 3-5 rolls myself

If you plan on doing this with wild caught salmon make sure it is in an at least -10 f° freezer for at least 36 hours to remove any parasites that may be in the salmon
Also the rolls are way too thick. Weigh out 114g-128g rice per nori. Also cut your cucumbers in half and the. Quarters. Get rid of the center and cut in eights.

cream cheese is actually a very popular choice and a delicacy in sushi especially in US and is very popular it isn't vile to put cream cheese on sushi especially when other people enjoy it even outside of US
Standard in a Philadelphia roll which is what they were making. It sounds gross but just adds a little moisture and creaminess to the roll, as long as the whole thing is still cool in temp it's delish
