You would need to manually fly the aircraft until you reach your preferred climb airspeed, then click the FLC button and engage AP. An alternative would be to click the FLC button at cruise speed, the use the vertical speed "rotary slider" to change to the desired FLC speed.

This was really helpful! I couldn’t figure out how to pitch the nose up or down on the plane.

You can set the "HDG Bug" to your current direction by pressing the "HDG" on all aircraft.
