    My understanding of the video is that he uses 3 different batters, each suited to a particular item that he cooks. That is what I read from the video as I don't speak a word of japanese.

      Suspect he is testing the oil for temperature by checking the reaction of the batter - when it reaches desired temperature in goes battered food

    i believe he wants to see that the temperature of the oil is right. for all i know thats how you usually test to see if it is hot enough. :)

    just a fyi, if you look at my name, you could tell that im asian because my last name is tran. tran is a vietnamese name, and my mom is chinese so im half chinese and vietnamese. i know this is japanese, i make japanese food all the time at home and i learned it all from youtube. damn i cant even have some fun on here LOL

    different food needs different cooking temperatures, checking the oil temperature for particular dish is already an in depth knowledge...
    if we could understand just by seeing a few seconds, then this guy would not be a master.

    Why does he drip the tempura batter into the oil first? Is it to lower the temperature or to check it?

      It use the time if the batter hit the bottom or not to check the oil temp. If it hit bottom and raise up. Low heat. In middle and rause up. Medium. Raise if just pour on it. Hig temp

    天ぷら屋は年中天ぷらばかり揚げてるので顔まで天ぷらに似てくるというが、この人の顔はあの政治家の顔みたいになっちゃったな・・・
