    Recipes:
    Baby Beet Salad with Chèvre Quenelles, Tomato Confit, and Raspberry Vinaigrette with Onion Olive Oil (Serves 2)
    Ingredients for the Salad:
    ¼ cup Moroccan dry-cured black olives
    1 yellow baby beet
    1 red baby beet
    1½ tablespoons white wine vinegar
    1½ tablespoons sugar
    ½ to 1 teaspoon sea salt
    4 ounces softened chèvre
    4 teaspoons Onion Olive Oil (see recipe below)
    4 tablespoons raspberry vinegar
    4 baby beet leaves, for garnish
    ½ yellow tomato, thinly sliced
    2 Oven-Dried Cherry Tomatoes (see recipe below)
    Ingredients for Onion Olive Oil:
    1½ cups good-quality olive oil (scaled down from original)
    2 cups loosely packed chopped leeks (white part only)
    2 green onions, chopped
    1 medium onion, chopped
    Ingredients for Oven-Dried Cherry Tomatoes:
    2 cherry tomatoes (keep stems attached if desired for garnish)
    Rock salt (to make a bed)
    Steps:
    For Onion Olive Oil:
    1. Cook the Ingredients:
    In a medium saucepan over high heat, combine 1½ cups olive oil, 2 cups chopped leeks (white part only), 2 chopped green onions, and 1 chopped medium onion.
    Stir occasionally and cook for 3-4 minutes.
    Reduce heat to medium-high and cook for an additional 5 minutes.
    Decrease heat to medium and cook for 45 minutes, stirring occasionally, until the onions and leeks are crispy and browned.
    2. Strain and Store:
    Remove from heat, strain the oil into a bowl, and let it cool before transferring it to a jar.
    Store, covered, in the refrigerator for up to 1 month.
    For Black Olive Dust:
    1. Preheat your oven to 175°F (80°C).
    2. Pit ¼ cup black olives and place them on a baking sheet.
    3. Dry the olives in the oven for 12 hours or overnight.
    4. Once dried, grind them into fine pieces using a food processor. Set aside.
    For Oven-Dried Cherry Tomatoes:
    1. Preheat the oven to 250°F (120°C).
    2. Wash 2 cherry tomatoes and keep the stems attached, if desired.
    3. Line a baking sheet with parchment paper and make a bed of rock salt.
    4. Place the cherry tomatoes on the salt and roast in the oven for 50 minutes to 1 hour, or until they are shriveled and partially dried.
    5. Remove from the oven and set aside.
    For Baby Beets:
    1. Trim the stems of 1 yellow and 1 red baby beet, leaving about ½ inch on top. Do not peel but gently scrub them with a brush.
    2. In a small saucepan, combine 1½ tablespoons of white wine vinegar, 1½ tablespoons of sugar, and enough water to cover the beets.
    3. Add the yellow beet first. Bring the mixture to a boil, reduce heat, add ½ to 1 teaspoon of sea salt, and simmer gently for 4-5 minutes or until the beet is tender.
    4. Remove the yellow beet, let it cool, and cut it in half.
    5. Repeat the process with the red beet.
    For Chèvre Quenelles:
    1. Soften 4 ounces of chèvre at room temperature.
    2. Using 2 teaspoons, form small quenelles (oval shapes) by scooping out 1 teaspoon of chèvre and transferring it back and forth between spoons.
    3. Make 6 quenelles in total (3 per plate). Chill until ready to use.
    To Serve:
    1. On each of two plates, spoon 2 teaspoons of Onion Olive Oil and 2 tablespoons of raspberry vinegar.
    2. Place half of a red and half of a yellow beet on each plate.
    3. Add 3 chèvre quenelles and 2 baby beet leaves to each plate.
    4. Place one thin slice of yellow tomato on each plate, topped with one Oven-Dried Cherry Tomato.
    5. Sprinkle ¼ teaspoon of Black Olive Dust on each Oven-Dried Cherry Tomato.

    I legitimately teared up seeing your dad's reaction to your cooking of his dish. I also love how even though the beets were a bit undercooked, he still saw the positive in it and that it's more nutritious and it tastes healthier. Shows how positive your dad is. The relationship you have with him is amazing Jet, thank you for sharing this with us!
    Oh also, in the early 2000's I was painting a house in midtown Toronto just off Yonge and I swear your dad asked me for directions somewhere. I was on top of a porch painting a window so he was a bit far away, but I'm almost 100% sure it was him, his hair is very recognizable and distinct (I wasn't able to give him directions though because I wasn't familiar with the area lol)

      I have no videos as a kid. While there are pictures, my family was never a picture family. We'd go to people's houses and they'll have albums upon albums of pictures and pictures in the living room, framed etc. I don't blame my parents though cause I never was anything special.
      EDIT: Jet on the other hand is a special kid who recreated his dad's dish on first attempt. Imagine that. He has the Iron Chef in him.

    When I first saw your dad make that butter, I said immediately to myself that I had to try it. I have since made, if I had to honestly guess, 20 batches of it. I've given it away to friends, family, and all of them say how great it is. It makes the absolute best garlic bread, and it adds a great punch into sauces. I personally love it stirred in at the end of dishes like plain white rice, or even a butter noodle pasta. It's absolutely perfect.
