Humanity revives you to human form and increases some defenses/resistances to things i dont remember. But most importantly, in my opinion, it increases item discovery rate maxed at 10 humanity. 10 humanity, paired with symbol of avarice and a ring, is insane for farming any item that you know an enemy might drop. I was able to farm slabs from darkwraiths pretty successfully.
@@joegella Yea its pretty much exactly that as far as I know. I dont know about health, I cant remember, but yea it opens you up to invasions and allows you to sort of upgrade bonfires so you can respawn with more estus flasks as well. At only that particular bonfire.

Does being in human form increase your health and open you up to invasions?
It seems similar to the "embered" form in DS3
