Spring Waterfowl Hunting in Alaska + Peking Duck

  • Spring is in full swing in Alaska with thousands of migratory birds showing up daily to breed and raise their young in the state's vast wetlands. A quick outing lands us a few beautiful birds to bring back to the cabin. Once processed and clean we try our hand at Peking Duck and are not disappointed with the iconic dish.

    I have watched all your videos for the past 4 years since the alaska move. You have inspired me and guided me to start my garden, preserve food, and learn the ways of homesteading. I'm hoping to visit Alaska one day.

    "Even though the muskrat is mainly a plant eater, it also eats small fish, clams, snails, and even turtles." = top entry on a quick search of "what do muskrats eat" ...so...yeah! It *can* eat a duck! (I'm Liking my own post because I Learned Something New Today!)

      We really think something took it and that's why we heard that short abrupt splash ten seconds or so after it landed. It was a green winged teal and they are very small, it was a strange experience, we felt crazy not finding it.

      ​@@SimpleLivingAlaska Ducks of all types when injured can swim down grab a reed and die. They don't let loose after death. So if you don't trip over them or a a good bird dog you're sol. Great video!

      You have forgotten that Eric preps seedlings, helps Ariel in the kitchen, cleans house, harvests the garden and cans that harvest. I think they both complement each other. She lucked out just as he did!

    I lived in China for 11 years and ate Beijing Duck several times. You guys did a great job with this recipe! I am certain that my Chinese friends would absolutely love what you’ve done here with the ingredients available. You cannot get more fresh and organic than these ducks! Wow.

    Duck liver pate’ is a superior delicacy. ❤I never had duck until I was about 45 years old. My family never enjoyed it apparently. I absolutely loved it. Same thing with lamb. In both cases much of it is just the way you prepare and season the meat. Both are extremely delicious flavors to me. Duck and lamb are so good. The Thai version of duck with pancakes, plum sauce, Thai basil, green onions, cilantro and Thai chilies…🤤🤤🤤🤍🙌

      Aloha. I was fortunate, my mom was born and raised in China (Armenian), my father and my brother as well as myself were born in Australia. Thanksgiving was always duck or goose, Christmas always lamb. Shepherds pie the next day!

    I loved "I think we're eating too good!" We'd go duck hunting and come back to the camp and eat and one of us would inevitably ask "I wonder what the poor people are eating?" This was in S.E. Louisiana.

    The doneness you want is called "Pittsburgh Style". Thats when it's charged on the outside, but pinkish on the inside. That's how I order my steaks at my local stake house. 😊 Pluss I BBQ my chicken like that aswell.
    I have never had Duck, but I'm sure it would be delicious, cooked that way also. 😊

    I’ve never lost a bird to a Muskrat but I’ve lost an entire day’s limit to a family of Otters. They jump on them like a Trout on a dry fly or a Great White on one of those Seal decoys. Feathers were flying in the wind while they shredded them. We just watched and learned something that day. Duck hunting is the best of days!

    I made Peking Duck once - hung it in the laundry room and aimed a fan at it for about 8 hours - the whole house stunk and the cats were going a little mad, but man that was an amazing dish!

    Hi Ariel, Eric and all the critters, Duck is one of my absolute favorite things to eat and the Chinese know how to season it. As for the well done - rare debate. Life is too short...eat things you like the way you like them. This was a joy for me to watch you guys enjoy the fruits of your hard work. I also adore heart and I'm happy to see that liver is growing on you guys. Liver is one of the the most nutritious things you can consume. so sneaking even a little bit in, like with the pierogis, is good for ya. Great chinese pancake technique.     I've said it before and I'll say it again: The absolute best RUclips channel out there. Perfect balance of nature shots, talking heads, educational, etc. I mean, no notes at all. Provides such a nice reprieve from my life in NYC.
    I'm also in awe of them wearing short sleeves/no face nets when there are so many mosquitoes out. That's so metal. My god, I could never. Give me layer on layer and layer, and about five gallons of bug spray.

    IDEA: We live in Michigan, where there are lots of mosquitos and deer flies. My dad has 2 ponds that he would stock with catfish, bass, blue gill and perch. He set up a really large bug zapper set out over the water on a huge pole, so the zapper would constantly drop bugs into the water to feed the fish. Could you hook up a bug zapper to the solar in the chicken area to feed your chickens MILES of mosquito bodies? LOL.

    I r ad a hack yesterday that said to put dryer sheets in your pockets to keep mosquitoes away. They don’t like the smell. I guess any aroma will do. The article didn’t specify. I really enjoy your videos! God bless you both!

    That’s awesome, spring duck hunting. Pintails are beautiful. We rarely see them here in Ontario - I’ve only shot one in 40 years. You guys have quite the life
