I'm about to finally buy a Coravin as well. I've been stocking up on some nice bottles of Chenin from the Loire Valley from the smaller growers there and don't like the idea of having to finish a bottle in 24-48 hours. I don't think I'll let my bottles get past 2-3 months after their first pour, but nice to see how much extra time you can get by using a Coravin.
I have the same model of Coravin but have never kept a wine as long as you. For me maybe 3 months has been the max. If I notice a difference, like you it seems to be more with the aroma than with the taste. I don't think there is a way to know for sure as I am only going from memory and there are other factors that effect how a wine tastes.
Ya know way to know for sure. Unless you buy two bottles from the same lot Coravin one and not the other and taste a year later. Or whatever time period your interested in.

Hmm. Yeah it seemed too good to be true. Also depends on how the opened bottle is stored? She put it in her fridge?
