Diverse food sources is a great idea. The surplus food can be sold in other nearby areas to provide money for even more projects. Nice drone footage of the farm to give us a birds eye view.

The maize stems are called stalks but stem is just as good. Also chickens, goats, cows like to eat the chopped up stalks, but it is a good idea to do the mulch first, you will get more more corn per stalk with a good mulch. I am very glad you have a farm manager who is very knowledgeable and can help you grow the most food you can with out damaging the soil.
