Eating these just now and I’m so so happy. I used bokchoy, carrots and zucchini as my veggies and for the noodles I used leftover spaghetti noodles as a substitute and I’m very very much loving my meal.
I have how Marion always says "virtuous" whenever she uses vegetables! LOL

You should try kimchi fried rice by putting equal amounts of kimchi and rice on the hot frying pan. It’s so easy to make. When I first made it, I couldn’t believe how delicious it was.🤤

It's great when you can find everything online!
The great thing about Korean ingredients is you can have it for a while and it won’t expire. But it’s still healthy because it’s natural and doesn’t have bad preservatives other ingredients have.

Marion, would something like this work with say, Shirataki Noodles? I'm more or less Keto (and I can't digest pasta), so I eat a lot of Shirataki Noodles when I get the "pasta cravings". I've even made pho and ramen with them instead of flour/rice based noodles. But I've never pan fried them, so I'm not sure how they would hold up.

Wonder if you can replace the noodles with shirataki noodles which might reduce the calories just a teenie weenie bit? You'll still have all the wonderful flavors from the spice and veggies. I think I'm going to try that. Thanks Marion, looks delish.

Editing at -2.25 was a bit off. The carrots were still on the plate when you pick up the kimchi. ☺️
Please cook mushrooms for longer, at least if they're button mushrooms. It's not the last ingredient to add and preferably cooked by itself before added to the rest of the dish.

Delicious noodles. But for me it was almost to spicy.
