If you're too lazy to make the grilled cheese but have tortillas on hand, a kimchi quesadilla is absolutely fantastic as well. It's one of my favorite things lately along with using kimchi in sandwiches lol.

I was in a small traditional Korean bbq restaurant in korea when imo slapped the kimchi on the grill. I looked at her like she was crazy. Then I discovered it is the best way to eat kimchi and couldn’t believe I hadn’t done it before. Changed my life more than korea itself.

I know there are folks who think Claire is being negative when she says "bring some dumplings!" or whatever. I just want to say that when my boys were growing up and I tried a new recipe, if I heard the words "you know what would be good with this?" I am surprised that there was no Kimchi Stew on this as its a perfect way to use kimchi that is overly fermented. Since I have an unhealthy love affair with kimchi, I seldom have kimchi that gets to that point.

Wow. Looks like you make your own Kimchi. That looks like a lot !! I've been looking at this Kimchi container they sell near by & it's over $4 for small amount. I did however finally whet to a Asian buffet we used to go and tried the Kimchi they had for the first time. All I can say that perhaps I need something to compare it to. It was not love at first taste BUT that buffet also has the worst sushi Ever !!! so perhaps their kimchi follow suit (?) I have zero doubt the Kimchi you guys eat is 100 x better !! I was at our local Asian grocery some time ago and I happened to have Korean ramen and cheddar cheese in my basket. Unrelated purchases. The gal behind the counter says, "You know, if you put cheddar cheese in your ramen it will blow your mind." I thought that sounded super crazy. Until I tried it and I was like, "OMG. WHY AM I JUST LEARNING ABOUT THIS NOW?" I tried the grilled cheese with the kimchi once after I came home late from a party. That rocked my world. It sounds weird but the taste explosion is nearly miraculous.
