- Cacio-e-pere pasta has always been a great favorite at our restaurants. However, for the home cook, a stuffed fresh pasta can be a challenge - and a time-consuming prospect. The same great combination of pear and cheese can be made into a simple risotto dish, perfect for an easy family meal or when cooking for a large gathering. Plus, in this episode, I get to cook with my granddaughter Olivia - it has always been such a treat to have my grandkids in the kitchen with me! Tutti a Tavola a Mangiare!

As a Filipino from the Philippines that often gets scolded by italians when I add cream to carbonara or condensed milk in my spaghetti, I kinda understand why Italians make cooking a big deal. Lidia a has taught me that for Italians, cooking is their primary expression of love. They cook to express care more than most nationalities I have known. So when my Italian friend continues to scold me for my pasta dishes, he is not arguing the food, but he is arguing the way he was loved by his Mama. So I get it now how some of them are protective of their dishes.
Maybe thats why Deanna & Joe can't get along, because Deanna refuses to salt/pepper her cooking.

This looks really really good. & to top it off, my hubby who has kidney disease can eat all the ingredients in this recipe (except we have to go very very light on the butter & salt so may need some other herbs to sub for salt.)

Instead of a balsamic reduction (ew!) try next time "Aceto Balsamico Tradizionale". It may cost a bit more than the factory stuff, but 100 times better. Remember, it needs to show the word "Tradizionale" and comes in a specific bottle.
