  • In today's video, we are looking at Texas BBQ for the first time with Josh and Olly from ‪@jolly‬.

    Believe me, the way they do turkey, at BBQ places is quite incredible with the brine they use. It is much more flavorful than any other turkey I have ever had.

    Dry turkey means it’s overcooked. Personally, I spatchcock my turkey so it cooks faster and stays juicy. It also makes it easier to check the internal temperature with a thermometer, so you know when it’s 74°C internally and you can immediately remove it from the heat to let it rest.

      Dry turkey comes from idiots that believe the 165 myth. Never cook poultry all the way to 165 temp it and take it out about 150. I pull mine at 145 and then I tent it. It will come up and the whole time achieves the same goal just not instantly about one minute at 150° achieves the same thing, that 165 does instantly that’s everybody’s problem

      Turkey cooked sous vide is even better. We spatchcocked, until we did sous vide. No going back.

    As I mentioned the first upload time 😂..as someone from Austin we are lucky to have a lots of amazing BBQ places Franklin’s BBQ, La BBQ, LeRoy and Lewis, Interstellar BBQ, Stiles Switch, Terry Black’s, Brotherton’s, Louie Mueller’s in Taylor so if you ever make it here just know it’s nothing like anything you’ve had before.

      Well, they called it chili, but really, those are just bbq beans. Pinto beans with some bbq sauce and some chopped bbq beef added in at the end.

    Crumble is a good comparison. Peach tends to hold a lot of water making peach pie somewhat challenging. Deserts popular in our colonial period had funny names. Blueberry buckel is another example.

    What you think of as beans is closest to Boston Baked Beans. What they are having is Ranch Style Beans, more of a chili flavor.

      Dominant flavors in Boston baked beans will be molasses, mustard and brown sugar. Some will add tomato paste but it's not necessary.

    That's how we do it here in Texas! And Terry Black's is by no means the best in Texas either! Every region of Texas is going to do it a little different in terms of rubs and wood because Post Oak is most commonly used down near Austin where I am in Fort Worth it's most Pecan/Mesquite/Hickory. The #1 barbecue joint here in Texas right now is Goldee's in Fort Worth. I haven't gotten the chance to try it yet though. Keep in mind that Josh's wife is a 2nd place winner on Master Chef, he's been all over Korea eating world renowned food as well as Michelin starred restaurants and they're saying that this was the best meal they've ever had.

    Cobbler is really easy to make, You do a batter pour it into a baking dish then pour the fruit in. The batter rises above the fruit and it causes the dish to look like cobblestones. ruclips.net/video/nqPq-zKYbHM/видео.html

      Just as Brits tend to assume our biscuits are just like scones, they seem to think a cobbler is just like a crisp. I like both, but I think cobbler is much better!

      Thanks I was looking for this. Saved me the time typing it out. Even here in America too many people think the pastry topped version is a proper cobbler when it isn't. That is more of a sheet pie lmao. The batter and fruit version rocks and is the real deal.

    First time here. I lived in Texas for 9 years. As absolutely wonderful the Smoked meat is, I think New Orleans has the best food in the world.

      New Orleans is definitely up there. I think it probably has the largest selection of regional food, anywhere in the world, that is top notch. I don't know if it could be said that any single thing is better than everywhere else, but New Orleans is definitely in the conversation for a place you can go to find the largest variety of absolutely phenomenal food. They just do so many things so over-the-top well there.
      Some other places you go might have a few speciality dishes, but you could spend a week in New Orleans, eating 3 meals a day, having them all be different, and still not have run out of amazing food. New Orleans has that amazing blend of influences, from Africa, the Caribbean, the South, Europe (heavy French influence), and more. Incredibly flavorful foods, all coming together in one area, and being morphed into New Orleans cuisine.

    I deep fry turkey every thanksgiving and christmas. It is never dry. I inject it with cajun butter sauce. Meybe I should send you some of our Louisiana spices and such...

      I don’t even know how we could deep fry a turkey, it’s huge and I have nothing even remotely big enough. 😅.

      @@AliKaiProjectWe have specific Turkey frying vats that hold lots of oil. It’s very good, but it can be a little dangerous. I prefer Turkey in the smoker. Many people brine their turkeys before cooking in the oven, it makes them juicier. Check out some American recipes and try them at Christmas. If you do it right, the Turkey is moist and flavorful, not dry!

    can get smoked dark meat turkey in stores has a little ham flavor to it. but dark meat tends to be more moist

    2:53 I’ve seen a lot of Brits say they aren’t a fan of Turkey. I think it is because you have not had it done right! People tend to overcook Turkey . It gets dry and flavorless.

      Turkey is my least favourite meat based on what I've had. It's highly likely that I've never had a Turkey cooked well though.. :D

    Howdy from Oklahoma! Texas does it right when it comes to barbecue. Barbecue here in Oklahoma is heavily influenced on Texas style barbecue, but also takes influence from Kansas City style barbecue. There are regional differences in barbecue styles, mostly based on the types of meat and sauces that are used. Anyway, I just happened to find your channel and subscribed.

      We're glad to know that the BBQ foods are very widespread with each having their own twists on it. We can't wait to try the real deal for our first time, it has to beat our typical home BBQ consisting of cremated meat to ensure it's not under cooked. 😅 Thank you for supporting our channel. 😍

    I would personally recommend Goldee's BBQ in Fort Worth Texas. They were recently named the best barbecue restaurant in the entire state of texas by Texas monthly magazine

      Literally most farmed or ranched products are sold by weight I don’t understand what your comment means. Is it supposed to be specific to what? I’m very confused, but I guess we should all thank you for your elementary insight

    In Hawaii we kalua turkey in a pit, or in a smoker, very carefully so as to avoid the dryness. It is an art.

    I live on the other side of town from Terry Black's in Austin. It's every bit as good as the boys make it seem. It's also one of the most expensive meals you can get in town. Brace yourself to see your bank account take a hit.

      @@AliKaiProject That meal the boys had at TB was hundreds of dollars. Just the two of you could get away with $150 maybe. Of course if you wanted to sample everything be ready to spend.

    The only advice I’ll give is to visit not in the summer, it’s soooo hot in Texas. Also, terry blacks has multiple locations, so you have options!

    I know it will mess up your schedule, but you should look at the video where they take then Uni students Max and Armand to The Prairie Fire in London to try BBQ.
    You will want to check out Your New Zealand Family at Terry Black's, but don't try to do a reaction because they will give you trouble about it. It will just give you a better idea of what Terry Black's offers. Mr. H and Friends went to Terry Black's, and I think that is okay to show. They might even invite you over to their house to taste what they are cooking on their new Franklin grill.

      Hi Linda, we absolutely love the High-schoolers and it's really lovely to see them growing up and trying all of these different cuisines. We'll add it to the list, we'd like to see the The Prairie Fire in action as we were planning on trying our first "Texas BBQ" experience there but unfortunately it has now stopped trading as a business. 😢

    Peach cobbler with ice cream is amazing. Peach cobbler is weird but I will says it's similar to a dump cake in the states. You take a yellow/ white cake mix, add canned peaches syrup included. Butter and if you like a little cinnamon on top. You don't have to mix it much maybe 3 stirs. We made them in a Dutch oven in Boy Scouts.

    Hello Kai and Alice, yes, I remember this video. I am sorry you are experiencing technical difficulties; it seems to be happening with other RUclipsrs out there. Before watching this video, I just finished catching up on the Mr. H and Friends channel. Mr. H recently purchased an American smoker The Franklin BBQ Pit smoker I think it's called, and about a couple of weeks ago they had the opportunity to meet Aaron Franklin in TX who designed the smoker, you can see his videos how excited he is to have bought it, then he received and used it already. They enjoy trying new recipes they never thought to try before and so far, they still enjoy what they do on YT it has all worked out for them. Perhaps you might want to reach out to them one day if you're interested in what they've learned so far about Texas BBQ. You might make a connection with them. Peace. ☮

      Hi Janet, the technical issue will be explained in our next video and it was definitely user error.. 😅. We've had a look at Mr H and Friends in one of our videos before and we really enjoyed their reaction to trying American BBQ for the first time (in the UK). It'll be interesting to see how their tastes and methods have developed having been to Texas and experiencing the BBQ food first hand.

      @@AliKaiProjectThey are doing a great job. They are experimenting with different meats & spices, timing, etc. It’s like playing golf, you’ve gotta keep practicing 😁 even if you have an oven only, you can make a respectable rack of pork ribs using low temperature over 6-8 hours. It’s worth doing!

    Great BBQ is made in yards all over the nation. Recipes that have come down in families through time. Texas does it very good but isnt alone in doing it right.

      @@AliKaiProject I’d be surprised if you could find bad BBQ in Texas. There are so many delicious styles and flavors across the South, but Texas just has it down to a science.

    I could not get my reply to go to reply, so this may seem random.
    27 July 2023 Mr. H and Friends streamed a vlog of their visit to Rock N Ribs an American Themed Festival (and car show) in Wincanton. Unfortunately, this year's festival was June 28-30. Maybe next year. They refer to a place called Spitfire which is in Bristol at Harbourside. On 6 August 2023 they vlogged a review of Low and Slow which has two locations in Bristol (Whiteladies and St. Nicholas Market. They refer to the Texas Rocks Bar & Grill that had a booth at the festival. It is in Yeovil.

      We have reacted to the one where they went to The Spitfire in Bristol which will be re-uploaded today, we’ll have a look at the others. 😀 Also, not sure why your comments are not posting as they’re not caught in our filter which is usually the case - we do need to change the filters a bit as default seems very picky.

    If your turkey was dry, it was done wrong. It should be similar to chicken.

    How do I put this (British fare) I've had Fish & Chips in London and found it to be vastly inferior to any F&C I've had in NYC... So, if these Brits swear this American food/BBQ is their best meal ever, who would I be to dispute it?

    BBQ is definitely not a Texas thing. There are regions within the US that are famous for their own style of BBQ. Texas is most famous for brisket. North Carolina is most famous for pork and great sauces. St. Louis is most famous for dry rubs. All do their own version well. You can find good BBQ throughout the US but for great BBQ, those three regions excel. What Texas does that no one else does is Chili. They have fierce competitions for it.

      It's good to hear that BBQ is quite widespread as it means we'll have plenty of opportunity to experience it regardless of where we visit. The brisket looks amazing though and we'd love to try it first hand at some point, although the Chili is something I'll have to be careful of as my tolerance for spice is not the best, I might just turn into the Wicked Witch of the West from Wizard of Oz "I'm melting.. ugh...".

      @@AliKaiProjectMost BBQ is not spicy unless you put a sauce or spicy rub on it. I don’t like spice myself, so I just stay away from the spicy sauces.

    The wrapping paper is the plate. There are actually some restaurant is the UK that do Texas BBQ. Some are probably 'Meh' but some are very good. You would be surprised. They may not be close to you though.

      We know of The Spitfire in Bristol which is meant to be pretty good, there was also The Prairie Fire which JOLLY visited but has since closed down. We'll find one and try it. 😋

    I went to Terry Black's and tried the huge beef rib as a direct result of seeing this Jolly video. Sorry, it was awful. Mostly fat, and though I like a fatty meat from time to time, this was gag inducing. The brisket and pork ribs were good. Overall, I was underwhelmed, as living in Texas, I've had much much better BBQ.

      @@AliKaiProject Hutchins BBQ (vs. the Original Roy Hutchins BBQ). There is one in Frisco and one in McKinney, both suburbs north of Dallas. In Austin, I'm not sure of the best BBQ place. Terry Black might be better there than the one in Dallas, since the original one is in Austin, I think.
