Hello Simon - This is a nicely done video about Sri Lanka and enjoyed watching it. Based on what I saw in the video it seems like you are enjoying the art of cooking Sri Lankan cuisine and towards mastering on cooking Vegetables, Meats and Seafood the Sri Lankan way. Typically in Sri Lanka vegetable curries will have very much less curry powder (spices in general) than it would be in a meat curry. In Sri Lankan cooking, curry powder is added to make Vegetable Curries with a very much less amount , than it is added to make a meat curry, as the whole idea is the spices should enhance the natural taste of the vegetables, while adding too much spices than it is needed, it would not give the unique taste of each individual vegetable curry (and would eventually give the same curry taste and suppress the unique taste of the vegetable, instead of giving the natural flavour that is unique to each Sri Lankan vegetable preparation). Practice makes it perfect and seems like you are towards that. Enjoy your visits to Sri Lanka

Although some food in Kerala and Sri Lanka have similarities, they are not exactly the same. It is like giving a blank statement as Chinese food and Japanese food are the same. Both cuisines have their own uniqueness of their rich flavours.
