This is the best video on the Internet how to use a wood fired pizza oven. You have made me a pizza superstar
Thank you and enjoy.
At an Airbnb tonight doing the same thing, thanks so much!
Any good recipes for the bases? Cheers
Yes give me a few weeks and I’ll post a 30hr poolish recipe. It’s a great dough.
This is great - thank you. I have been wanting to know for about a month. I cannot wait to try our clubs oven after this. Thank you for including the timing and showing us the whole process
Thank you for some simple, and clear instructions ~ staying at an AirBnB with an outdoor wood oven. Happy to give it a red hot go now
Thank you.
Was it in Limestre ? :)
This has to be the best instructional video on how to use a wood fire pizza oven. A simple flawless video. I never thought to heat up the timbers (extra) before throwing them onto the flame. This has been a game changer! Thanks
Thank you for your comments.
Been planning on building one of these but got to admit I don't know how to cook in one, thanks👍👍
Wood fired pizza? How’s pizza gonna get a job now
Underated comment
Thanks Roberto. Awesome learnings for me. I'll be in touch personally in about 12 months as we are about to build a new house. One of your forno pizza ovens will be the jewel in my entertaining area.
Thanks Chris. Hope I can help in the future.
Thank you, I learn couples of points. 1. start the fire from 1 size to heat up, then move to another size. 2. Pre-heat the wood for cook pizza. 3. Leave the pizza staying for the original place you put in.
It's been 2 years. How is your pizza cooking going? I bet you're a MasterChef now :)
Pizza’s are fantastic but I should do a few more videos. I have been lazy. Thank you.
when you took the Pizza out of the oven...... I think it moved. lol
Absolutely brilliant ,I've got an oven but have struggled with it .Your brilliant Video has gave me a lot of good advice ..
Thanks David.

This was so informative! I’m now ready to cook! Thanks 😊
Thank you.
Brilliant informative video
You are obviously an expert. Thanks for your great video.
Thanks mate, great explanation and demo. Cheers from the Hunter Valley.
Really great video!! I've just completed my oven. Watched lots of how to build it but none on how to cook a pizza in it. First night I used it invited the whole family over. Pizzas was a disaster. But, everyone still had great fun! You just taught me all the mistakes I made! Can't wait till Friday night to have another go at it! Thanks again!!
Thank you. It’s usually takes a few attempts. Enjoy.
I remember when I did that. Nothing went right for me, i had about 10 people over & ended up buying pizza, lol. Honestly, it took me about 20 pizza's before I got everything to pizzeria quality. Now, people that come over ask "you gonna make pizza, right".
Same my son had a party with his mates and I didnt get it hot enough, and didn't flour the pizza peel enough and pizzas ended up a mess in the oven! A few more attempts and all 👍. Great helpful video
Always have to trial these things so ya don't dissapoint. Mouth watering for Wood Fired Foccacia 😋
Great info. I cook multiple pizzas and my consistency is poor. My undercarriage is lacking. You make it look easy. Thanks
Roberto, you are a legend. Seriously mate, the beginner's guide on a wood fire pizza oven on how to do it, step by step. Thank you for that. I'm looking at getting one myself in the future.
Thank you
That look at 8:02 like a kid at Christmas! Love the vid bro
Love all your videos....cause of you I purchased the ALFA Ciao....& learning how to bake a pizza. Love it.
Great video! Just bought a house with a pizza oven so now I’m trying to learn and use it. Thanks!
Great Video learnt more thaan expected just what i wanted, Thank You!!
You have become a star of our household and neighbors!!! We just purchased a house that came with a pizza oven and thought we would have a party to try it out. I'm a terrible cook but this video made me look like a star. Thanks again. We're off to try your roast video next
Thank you, I appreciate your comments and enjoy the oven, they are good fun.
If you're a terrible cook, I'd say try the oven out before the party, not try it during the party. Can take some figuring out how to hit right temps and making a good pizza. Don't let your guests walk away saying your pizza party was a shambles. 😄
It was too got because you put a fresh log onto the fire just as you began your pizza. There should be no flames when your cooking just red hot coals
Yes only need flame for Neapolitan pizza if you want a 90 second pizza. I agree hot coals are fine for other pizza styles.
One the best how to videos I think I’ve ever seen on RUclips. Great work.
Thank you.
Great video! Just the info needed, no big long story. Love it. Thankyou!
Where’d you get that big ole circle on a stick????
I want one :D
Hi, its called a pizza turning peel 20cm, you will find them online. Regards Roberto.

Thank you sir :D
Also thank you for posting your instructional video. This was our main operating procedure all day during our pizza session.
The pizza was amazin 🙌
Thanks and enjoy.
Awesome video!!! Just something I learnt from another pizza chef is when you turn the pizza bring it out the oven to the front turn then place back on same stone. But great video sir thanks!!
Hey thanks to this video we have amazing first pizza day in our new oven we follow your steps amd all came to plan . I think is important to mentioned that the oven provably will be good idea to cure it before using it for first time by light fire 2 or 3 times at not extremely hot temp. We notice that took really long to get white dome however the weather was really low here in the uk so the conclusion is if you using the oven in the winter provably need start the fire 4 hours on advance if is summer 2 hours like this video . Thanks a lot 👍👍👍
Yes you are correct, it doesnt get that cold in Australia but a good point if the oven hasnt ben used for a long time.
Just picked myself up a pizza oven from Bunnings for 1000 bucks. I’ve cooked four pizzas in there and have all taste better than your average franchise shop down the street. I have always had my flames to the back, but it makes much more sense having the flames on either side, and I’ve learnt that when it’s ready to cook the dough more then go white. Keen to try this this evening
It’s more important to get the floor temp up near 400c and then have a nice big flame. Enjoy
I'd love a wood fired oven but it seems too much hassle for such a quick cook. Wouldn't you get the same results with a pizza stone on a bbq? Great video though. Very informative.
Hi Guy, BBQ stone is fine and you can get good results but a good wood fired oven is designed to get up to 500 Celsius so you can cook a Neopolitan style pizza in 90 seconds. The Alfa stainless steel pizza ovens are also a good choice, they heat up quick and use minimal amounts of wood if you want that authentic taste.
thanks for posting! great tips.i cook in a WFOven and enjoyed your efforts.
Thank you.
I can't believe NYC banned these things. Might as well just kick NYC out of the country at this point, you know?
Australia will probably do the same one day. The gas fired pizza ovens are very good as well although wood fired is still unbeatable.
I will build one of these for my mom with the clay from our land. 😌
You sound like you are having great weather
How did you mob or cleaned the oven floor before cooking pizza. Thanks
Damp rag. I should've finished the video.
Hi Roberto, the video is really good. Thanks
Please share what size oven you are using.
Best regards, Andrew
Calabrese 800. 80cm internal dome radius.
Fantastic video! What brand pizza peel are you using. I'm in the market for a good sturdy one
Hi and thanks. The peel I was using you cant get anymore but the Chinese made anodised aluminium perforated peels are very good and you can find them online. The italian made GiMetal and Regina tools are top quality but very expensive.
nothing better on a cold rainy day then a nice fire and pizza..well done mate
Thanks.
Thanks mate, Your my pizza poppy hero😂
I could smell the wood and pizza from here. I'm watching this at 4am. why.
Sounds like you don’t watch TV either. RUclips is a lot more interesting.
Very nice, but a ton of work just to make one pizza. Great for a small business, but not just to make dinner for the family.
Yes you would need to cook a few pizzas or other dishes to get value. This is why I also have stainless steel wood pizza ovens and gas pizza ovens. These are perfect for a quick cook and you will get the same results.
Newbie here. Is the initial stacking of wood four logs with kindling/egg cartons to light? Cheers
Hi, if you don’t use the oven often, yes start with 2 or 4 logs and heat up slowly. If you use monthly or so then stack 4 or 6 if it fits. Regards Rob.
Impressive. I would get VERY fat experimenting with that oven.
Everything I needed to know Thank You!
Hot damn that looks good....
dude didnt even show the pizza being cut or anything...
Good point , I should have done that.
Just bought a home with a pizza oven and been looking for these exact instructions! Thank you!
Nice video Roberto !! Thanks
Thanks
NICE WORK!
Thank you
Very helpful. Thank you!
Wow brilliant vid don't need to watch any more just got my pizza oven built looka alot of fun 👍
Great video . I need a temp gun

What bricks did you use for the oven floor?
They are refractory fire bricks, 30 x 30cm.
Thanks it worked perfectly!
That's a lot of work/time for just a pizza, lol.
Yes it is but it’s worth it when you get to taste the difference between a retail pizza.
thanks, I learned a lot from you on this video
Someone told me for Heating the oven needs maximum 4 hours
Hi, depends on the size of the oven and the type of wood used. Usually takes 1.5 to 2 hrs with good dry hardwood.
I dont understand the point of heating up the floor all to cool it down with a damp wet rag.
Hi, you only cool it down if it’s too hot for cooking on. You also use the damp rag to clean off the ash. I hope that helps.
Just got a brick oven for our summer , laugh, but video shows the extra fun in cooking nice one. Tim
Thank you
Great video mate I bet your pizza is delicious
Thank you.
Brilliant advice thanks 👍🇬🇧🇦🇺
Did he say what wood he used.
Great video, thank you.
Hi, we use red gum in Australia.
Thanks for this video - its been a great help.
Thank you
Really enjoyable and informative thank you. Also at an air bnb with a pizza oven - ours is in Crete- v keen to give it a go now
Great video! Thanks so much for all of the tips and tricks. Can't wait to put everything you've shown me into action!
Thank you so much for excellent informations and tips.🙏👍👌🙏
Great content delivered, thanks heaps buddy
looks crap
Very nice oven really liked n I want to know n the floor is of iron or just nice bricks??? What kind of floor is nice and durable hope u will tell that....
Thanks. The floor is 50mm thick refractory brick tiles. Refractory floors are the best to maintain a constant heat.
@@pizzaovens-fornieri thank you so much for you reply.
Instead, Can we use soapstone floor?
Great video, thank you for posting.
u the man
Indonesia nyimak, Aku suka !
Thank you.
Terrific. Thanks. Long after we've had an oven (for both bread & pizza) I'm just going through vids now for tips and tricks. I've used a mop to clean but like your using peel & wet rag better! Also, looks like most folks have fire to side -- another good hint! I've always had it in back but will try side now. But, I like the floor a little hotter for a crisper crust then, at the end, raise the pizza to dome for ~10 seconds or so to crisp it up and get even melting to cheese. Thanks again!
What kind of wood do you use? kiln dried? oak?
Hi, in Australia we generally recommend red gum because it doesnt leave behind much ash but any un-treated hardwood is ok.
SO helpful - thankyou 🩵🙏🩵
5:20 - The best I've ever heard anyone say "pizza."
Hello! I recently purchased a new home in New Mexico and the former owner built an outdoor Pizza Oven! Based upon looking at the size of your oven, mine is 2X-3X larger. I'm hoping you can answer some questions for me!: 1. Since it probably hasn't been used in a while, do you recommend a pre-burn/heat before actually cooking anything? 2. What type of wood do you typically use? 3. Considering my oven is much larger, how much longer do you think I need to prep it for cooking? 4. Do you ever cook other types of foods (i.e., steaks, chicken, etc.) and if so, do you have videos on those cookings? Thank you!
Hello. Yes it’s best to fire it up slowly, look at my how to maintain and cure an oven video on my Chanel. In Australia we use red-gum so you need to look for a dry hardwood or compressed logs in your area. Bigger ovens use more wood and a bigger fire so they should heat up around the same amount of time, maybe 2 hrs or so. When the soot burns off and the inside turns white or back to its original colour, your floor should be around 750f. Look at my Chanel for other cooking videos and look after your floor, don’t let it build up in fat etc. I hope this helps.
I wish the audio was clear it would be a better video
Ok thanks for the feedback.
Thank you, Roberto. This video was extremely helpful as we just built a pizza oven and it's ready for our first pizza over the holidays. My question is, did you use raw dough or precooked dough? Do you have any tips on how to prepare the oven for it's first cook? Thank you!
Hi, after you have cured and sealed the oven, build a good hot fire on the floor and then spread the coals. This will help clean the floor, then push the fire aside and clean the floor with a damp cloth like I do in the video. I always use raw dough cooked on the floor. Enjoy.
@@pizzaovens-fornieri - Thank. you very much for your reply and guidance. Happy holidays to you!
Excellent video have been staying at a friend's for the week with a pizza oven. Wish I had found this video earlier. Perfect tutorial have subscribed now. Hello from sunny Cornwall in the UK. 😁
Thanks Russ.
Hi Roberto,
Great video thanks. I note you have very little smoke coming out the front, do you have a rear flew? (I can see a stainless pipe in the back of the video, but unsure if this is a post of your patio. Also, if starting from a cold oven (25 °C as I’m in Cairns) how long should I burn the first stage for before moving the fire. Kind Regards Leon
Hi, the flue is at the front of the oven on the outside of the dome. Stack the fire in the middle until it burns down, maybe 1 hour before you move it to the side. I hope that helps.
What the big deal about PIZZA? Dough, tomato sauce mozzarella cheese small olive oil big deal peasant food
Simple food that tastes great.

Lol I get that but people make such a big deal about Pizza geez get over it its cheap slop
@@garypic4083 i assume the pizza you eat is cheap slop. if you make your own you might be suprised what real pizza tastes like when you use fresh ingrediants on a dough with very little yest.
@@pizzaovens-fornieri
Lol Pizza poor mans meal
The temperature you talked about, is it in Fahrenheit or Celsius? Could you cut the pizza and show us the cross section and the crispy crust hold
H, the temperature is in Celsius. Yes I show the cut of the crust in other videos, this video was more about the oven and not the pizza. Thanks for your comment.
Thx for the tips mate, I didn’t realise I’d been doing it wrong
Hi Roberto, just a question on the wood. I tried using Red Gum from the servo. It smokes a lot. I like your idea on putting the wood in the oven first to dry it. This was my first attempt. My fire wasn't as big as yours. I got a temp of 250 C in the dome and 200 C on the floor. Do you get your wood from somewhere specific? ....or do you just make sure its well seasoned before use? My oven is new and not seasoned. Im reading that it has to be well seasoned (mortar fully dried) before I get the big temps you talk about...400-450 C.
Hi, red gum from the servo is fine and it will smoke if not dried out well, heating it up will definately help and I buy it in bulk, try market place on facebook for suppliers. Seasoning/Curing should only take about 5 days.Which oven do you have?
Thanks man, starting a business and this was very helpful.
great video! what do you do once you're done baking pizzas, do you let the fire burn out? Any tips on cleaning up the over afterwards? Thanks!
Hi Marcel, when you're done spread the hot coals over the floor where there are stains etc. and leave the door off until the wood burns out. This will help clean the floor and you can then use a wire brush while the floor is still hot if required.
Total pro I've worked with pizza chef's with less skill and knowledge. Cheers mate
Thank you.
Great video! I used the technique of moving the timbers from one side to another but I have been having difficulty getting the bottom of the pizza cooked thoroughly. Any suggestions are appreciated. Thank you!
Hi Paul, you should get an infrared thermometer and check the floor is at 400 Celsius and the timber has a flame. This will ensure you get an even cook in 90 seconds. If your floor doesn't heat up to 400 Celsius, you might have poor quality floor tiles. Some Chinese made floor tiles don't heat up or recover very well. I hope this helps.
Good instruction, Thank you!
Quick question I noticed you have a covering behind your pizza oven, is it ok for the pizza oven to be under a roof and has a covering behind it?
I'm wondering about the smoke that comes out from its chimney. I just bought a movable outdoor pizza oven and I'm trying to figure out where to station it in my backyard. Of course I want it under our patio roof so if the sun is out and hot I have some shade. Would it be ok?
Hi, you will get smoke, how much depends on how dry the wood is. Maybe set it up near the end of your patio roof so the smoke gets away easily. The chimney on mine is extended through the roof so I don’t have smoke problems. I hope that helps.
that was great, thank you so much for the video
I have already built my handmade woodoven and i m ready to learn the secrets of making Pizza. Nice!!!
Top clip, thank you!
That pizza looked great.
Those tips will make a big difference to the outcome of my pizza tonight. 🤞🏼🤞🏼
Thank you.
Spot on mate. I am going to build a pizza oven in the back garden and this has helped plenty. One thing I am worried about is smoke annoying our neighbours. With burning wood do you find this a problem?
Hi, smoke can be a problem with neighbours so you should consider positioning of the flue. Maybe extend the flue or get an oven on wheels. Otherwise use good dry hardwood such as red gum and pre heat the wood before putting it on the fire to minimise smoke.
I'm building an oven. i am using firebrick top and bottom concrete base.is it safe to cook pizza on firebricks . great video thanks from Texas..
Hi, yes on fire bricks is perfect, the smoother the better so that it doesn’t let any food waste bacteria build up.
Great content! Very informative. I'm heading to a camp site that has a wood fired oven and this makes me feel alot better about how to utlize the oven.
Top stuff, mate. Just got an oven and kinda messed up the first try. Now I can come back armed with your tips.
Enjoy
Great, I wanted to understand the fire thing, will try soon. Thanks.
We are first timers, we could not get it right, I'll try tour technique. I used olive wood, what type of wood is your preference?
We use dry hardwoods in Australia, most common is gum tree wood such red gum.
