I’ve already made it twice this week - eating some now. The only thing I tweaked the second time was I didn’t double dip the chicken. My method may still need some improvement but it just made for an incredibly thick batter. I am definitely happy with the adjustment. I think double dipping isn’t necessary because of the wet batter but I still fried them 2x. Thanks for the inspo!

I just made this, and it's probably the best chicken I've ever tasted. I recommend making the sauce afterward so you can put the chicken in the pan with the sauce to coat it completely.
potato starch is not "better" they do two different things, use both, starch makes your flour cling together better, baking powder makes it airy and craggley
