If this recipe serves 4 ppl, then it's 5 g protein per serving. The MINIMUM daily requirement for an avg human is 55g daily but 100 g (especially the elderly) is recommended by physicians. This recipe will provide some of that protein but you'll need to add considerably more to your meals. This recipe looks very yummy & full of vitamins along with the protein so I'll give it a try!

Very attractive recipe -- the sweet potatoes alone would be an impressive side. The pesto is interesting, but as I am not vegan I would use real parmesan. But I do not find it necessary to add to the potatoes.
Use avocado for the "pesto" Vegan Parmigiano tastes like card board. Yes, even the really expensive ones. Too processed in an attempt to give it "authentic" flavor.

I almost don’t even need contacts and I’m 63 and have had poor vision since before I was 11!
I like them various ways. Mashed, with crushed pineapple. Crispy fries. Sliced and tossed in dry onion soup mix and oil and roasted in the oven till soft enough to eat.

Basil is a super strong herb: I feel like 2-4 leaves would’ve been fine not a whole sprig. You always want a balance without one herb overpowering another. I’d consider trying to make this making the basil modification. Thanks for sharing.
@@dagon1978it If I am making a basil pesto, it is without chickpeas and green peas. This was not a pesto - it had the consistency of a hummus. Pesto is simply basil, parmesan, garlic, pine nuts and olive oil.

BTW, to be precise, what you just wrote is a recipe for Pesto alla Genovese. There are different variants of pesto (the Sicilian is probably the most famous) that have other ingredients. You know that right?
I know sweet potatoes are very good for us, but I don't like the taste of them. I bake them and add them to my smoothies to disguise the taste. It works great.
With those flavours: That would be disgusting. Anyway, regular potatoes are not nearly as dense. If you want an alternative, use a squash of your choice.
Sweet Potatoes aren't news for us...they've been around in the US since 1648...in Germany they've only been around for a decade at most. So I'm thinking you should redirect your efforts over there. One thing you might want to try is Sweet Potato French Fries.
Advice : If you are diabetic, don’t eat them. UNLESS you have deliberately made them so that they will be a resistant starch dish, and THEN , eat only a half of a serving.

Way too much olive oil. While it’s the only oil I use (unless making a cake) it’s just too much. The rest of the flavors, fine.
