    My hometown! Such a shame Albania faced all these difficulties in the past it could have been a great country to live in as it’s beautiful with ideal climate, sea 🌊 mountains 🏔 and lovely fresh food 🥘! It’s so nice to see some progress.

    I would call it Mediterranean albanian food with an influence of Italian, greek, turkish food, organic, strong and heavy but very healthy,

      these are foods that were eaten throughout the Balkan during the Ottoman period at that time everyone ate the same things hence to say that it is a turkish food or Albanian food even less greek influence like you said it doesn't make any sense..the Slavs and Greeks changed the names of the foods that were used at that time but they eat the same foods

      I can give you an example how many times have you heard the phrase Greek salad by foreigners??? ..what is it?? it is simply village salad which has always been eaten in albania by the poor people albania has been isolated for 50 years until the 90s in all these years the neighbors have promoted those foods as if they were their own foods

    The difference between "dolma" and "sarma" come from origin of the words. The verb version of "sarma" is "sarmak" and in English rolling, the Verb version of dolma is "dolmak"(full)/"doldurmak" (stuff). So with pepper, you will stuff ingredients in it. That is dolma. But "Sarma" is made with grape leaves, and you roll it.

    I love the videos. I've heard a lot of the Ottoman food influence in the region. My question is how do people know that it's an Ottoman influence and not an earlier Greek-Byzantine/Roman influence? I would have just naturally thought that all of the food influence in the region would be from the much older, wide-spread Hellenic influence in the area. Just wondering.

      I would say that it’s weather the ingredients look like they came from Central Asia or not.

    Ottoman may have ruled Albania but they gave back the most back to Albania and didn’t force people to convert and let them keep their religion..

    Fergese is not menemen, it is different. Menemen is made with meat sausages and basturma and mozzarella like melting cheese, fergese is made with Albanian ricotta which is very different from any other ricotta like cheeses in the world, it is drier/saltier/grainy texture and you will never get the same taste or texture if you are not using Albanian ricotta. Stop with making everything Ottoman. The peppers and tomatoes we use in this dish did not even exist in the near east they came from South America after the continent was discovered by the Europeans in 1492. It is much more likely that these dishes came from Spain, France and Italy and then were transformed in each country according to the local products and tastes into their own versions. Much more likely that these made their way through the Balkan's first and then to near east. Italy has a very similar dish too.
    When you look at eggplant and okra dishes, minus the tomatoes and peppers, although they came to Europe much earlier then the Turkish people discovered Anatolia, then you can refer to the east.
