Missed the live stream, but I've got a question : As a pro brewer what single thing affects consistency the most, so what do you look out for most to get right to ensure a consistent flavor of the beer. Or maybe it's more than one thing, maybe the most important three things ? Also thanks to American Hop growers, Amarillo is AMAZING. About priming I much prefer bulk priming, just means you have an extra vessel for bottling. You can use different bottle sizes and don't have to worry about how much you have to prime in each bottle. I don't use a calculator but by the final gravity. If it's all malt and ends up at FG 1012 I might add just a little to nothing, if it has some adjuncts and ends up at 1002 I add a lot more (like 1 cup of sugar on a 23l brew).
