This is more a Malaysian Indian style curry. Malaysian Malays and Malaysian Chinese do not cook fish curry exactly this way; each ethnic in Malaysia has its own way of making curry, even within the Malay community there are different versions of fish curry. Being a Malay, I can say that Malays do not use cinnamon stick (and cloves, star anise, cardamom etc) for fish curry, they use these only for meat curry. And these days Malays seldom use fenugreek, some do but they use "halba campur" (mixture of fenugreek, mustard seeds etc)..whatever, all curries in Malaysia are delicious, whether Malay, Indian or Chinese.

In Malaysia, we have special commercially-designed curry powder separately for fish, meat and dried salted fish. We also have commercial packs for korma, rendang and other curry-like dishes. For fish, we buy packets that say 'Fish Curry Powder'. For meats like beef and mutton and as well as eggs, we buy packets that say 'Meat Curry Powder'. For dried salted fish, we buy packets that say 'Dried Salted Fish Curry Powder'. I don't know how they make each of them, but I think basically same ingredients, only at different ratios. But if you cannot find specially designed curry powder, suffice to just mix these together: CHILI POWDER, TURMERIC POWDER, CORIANDER POWDER, CUMIN POWDER and FENNEL POWDER. Mix all these, less of turmeric, but more of the other,s put water, make paste, there you get yourself curry paste. When sautee this paste, add POUNDED GINGER, POUNDED GARLIC and POUNDED ONIONS (to taste better, also add slices of ginger, onions, garlic besides the pounded ones) - add curry leaves (if you have them, substitute with bay leaves or use both), cinnamon sticks, cloves, star anise, cardamoms, fenugreek and mustard seeds (mustard seeds and fenugreek only for FISH in Malaysia), especially by Malays) - there, you'll get a complete curry with curry aroma..

it makes it a bit more difficult to eat. the whole purpose is so that you can pop the whole thing, juicy and saturated with thick curry , into your mouth. If you dont really mind having to nibble away the top part then sure, go ahead

You suppose to put the fish first then only the bende . normally bende only take 5 minute to cook . fish head takes 20 minute to cook.
