This is exactly how armor enchanting works, if anyone is interested: You have a limit of 20 points in each category - Blast protection, Fire protection, and Projectile protection. Each of the corresponding enchantments add 2 points to their category per enchantment level (so Blast protection 4 would add 8 points to the blast protection category). But, normal "Protection" adds 1 point into every category per enchantment level. So, the normal "Protection 4" adds 4 points into every category (12 points total) while the specific blast, fire, and projectile protection 4 enchantments only add 8 points into 1 category. Because of this, just having normal protection on all armor pieces is better, unless you want to carry around 3 sets of armor with different situational enchantments. Also, these enchantments dont work as normal physical armor, so you still need diamond or netherite AND the enchantments for best effect.
Thats an awesome system! Also, there is an easy way to check if the villagers have full HP after converting, just cure one in creative mode, and count how many hits of your fist it takes
When a villager is converted to a zombie vilager or vise versa their health resets as they are now a different entity then what they where before so any health loss as one version of the mob is not going to transfer over to the other version.
I'm not saying that your zombie conversion system isn't good, it was really cool and I never thought of it that was but if you go on RUclips and look for videos on making highly effective ones, I think shuller craft made a video about making one.

You don't need blast protection if you have protection. They do basically the same thing, but protection applies to all types of damage
Blast protection provides more protection to explosions, which are generally the most dangerous thing in single player

You can only get 10 max of any one enchantment; anything above that is wasted. Its best to stack different types of prot.

Get your hands on some soulsand, you can use it to make both of the farms 100% automatic. It makes stuff rush up in water.
Maybe adding fence to split zombies? One for each side = they convert villagers to zombies twice as fast at least
