    5160 steel with a D2 powdered coating to avoid scratching.
    S5 or S7 steels.
    Chromium Vanadium steel

    Ahh, steel, there was a time when a steel sword meant more than all the gold and hewles in the world. What good is gold and jewels when a steel scimitar could make a man bow before you. But steel isn't strong! What good is a sword without the hand that wields it? It's not the weapon that makes the heroes, but what we choose to do with our hands. That is strength! (Jokes aside, it's hard to believe that high quality steel is now common and mass produced when back then a steel sword was worth more than a levy of peasants)

    While not so much for swords, for knives you may want to consider stainless steel based on your environment and how light/heavy of a job you have planned for it..

      As far as I remember, stainless is trash for keeping edge hence its used for kitchen knives that you hone on steel thingy, not sure how its called in English
