  • The secret to getting a clean peel when taking a shell off a hard boiled egg is to tap it gently though firmly with a spoon to separate the inner lining from the shell. After the lining has been given enough of a gentle jolt to loosen it attachment, the shell will peel very easily.
Additionally I had an extra step due to personal preference. I use a large needle and pierce a small hole at the larger rounded end of the egg. This area is where there is a natural air bubble in the egg. When the water heats up to boiling the air will expand and escape out the small opening. This stops the entire shell from cracking as it has created an escape valve for the pressure.
I’ve spent over half a century crossing my fingers every time I boiled eggs, hoping I would not get that awful problem of peeling an egg apart and having half of it stick to the shell. It is totally worth it to take the preparation time and avoid a very disappointing result.
