Squirrel is so lean that it will get stringy if not cooked properly - low and slow. It is delicious or nasty, depending on the chef. Haven't had opossum but would like to try. Heard good things

Then you’re making Cajun jambalaya. Creole tomatoes are used in creole jambalaya. It’s basically a sauce piquant with rice.
