The meringue peaks seem to be soft/medium to aid in a smooth shiny finish, usually when making meringue cookies with patterns the peaks need to be stiffer to hold the shape of the piping tip. I'm definitely going to try this though the finish is perfect! I think also sandwiching them together like macaroons might make for a cheaper alternative
Also, dont you have to leave them inside without opening the door of the oven for at least two hours after baking? I do that so they can dry and melt in your mouth

Yes, i would definitely use this recipe for sandwich cookies. But it is too soft for the usual forms of a meringue cookie

It is because it ts swiss meringue, not american meringue.
