I genuinely think you're doing revolutionary work in here. From a communications and mass media perspective, the fact that you're putting these resources for the masses without much cost constitutes a change in paradigm of means ownership. A change that, although made possible thru the already existing technological infrastructure, has never been implemented in such a way up until now. It's revolutionary work, man, in more than one way, and for that I'm thankful.

Is there an option to host an instance on our own infrastructure? It would be great to have the control and be able to scale it without causing a lot of cost for yourself :D

Can you join the Discord at discord.vdo.ninja and share more details about the setup you are using. Macs might have issues if they are publishing an incompatible H264 stream, as Apple doesn't like to get along with others, which was a problem in older versions of vdo.ninja at times, but I'm not sure I'm able to reproduce it at the moment. What browser? what settings? What version?

can meshcast be selfhostet on AWS/DO etc to operate in SFU mode "at own cost"? would be great for single events with lots of old devices at guests.

From what I've seen, Meshcast doesn't offer streaming the desktop audio... it just shows mics attached. It's a very much-needed feature.
Can you test on vdo.ninja/beta ?

we seem to be having problems with meshcast and participants coming in from Macs.... any thoughts????
