Hello! Thank you for your comment. Preheating usually takes 10-20 mins. Cooking time depends on the type of pizzas. Pan pizza usually takes roughly around 18mins where as Neapolitan pizzas take 2-5 mins. I hope that helps! Ooni just came out recently with an indoor pizza oven. I think it’s worth looking into.
The lack of spotting has nothing to do with anything you did or your home’s atmosphere; the Breville Pizzaiolos is just not well equipped for Neo styles pies. 750F isn’t really hot enough, and I personally think the Breville runs a little cool; I’d like to laser thermometer test the stone and see what thier 750F setting is really at. For more advanced truer Neo style pies (spots, 90 second bakes), for about the same money, the Ooni Volt (goes to 850F) is a better choice.

I’ve been wanting an indoor pizza oven for several years now, and I always kept my eyes on the Breville (it really was the only one around), but I saw over and over that the results coming out of the Breville would not have satisfied me- the pizzas look fine and tasty, but they were definitely in the New York style, classically baked around 600-650F (golden brown with little char). Almost from the moment I I saw the first videos of pizzas coming out of the Ooni at 850°F I was thrilled-charred leopard spots!-at last an indoor oven that could compete with wood and propane fired outside pizza ovens!@@WeekendInMyKitchen

The 'Darker' knob needs to be used on the Breville for Neapolitan. Am having good results with the knob turner to darker - one knotch to the right. It then delivers more heat to the edge / cornicione.
Hello! I just talked to another fam here yesterday and we were discussing about the new Ooni indoor pizza oven. I think that one is worth looking into. I’ve had my Breville Pizzaiolo for about 2 years now and overall I’m happy with it. I love how it preheats faster than a regular oven with a pizza stone. I probably haven’t ordered or bought pizza in a while since I got my pizza oven. It also made me a bit of a pizza snob 😂. It is really pricey so I would really think long and hard and make sure I have the counter space. I hope that helps!
Well it’s extremely rare for home indoor ovens to reach 750 degrees. To produce that much energy you need to something that’s insanely well engineered. If you’re on a budget you can get excellent cheaper pizza ovens at lower temperatures but it won’t be as flexible……Also pizza is a serious hobby and people will pay for the gear. That said, compared to other hobbies it’s actually cheaper
