I actually made it tonight. I tried beef cheeks once before for another recipe and it was so tough that I was a bit reluctant. I also tried another beef Bourguignon recipe recently and the texture of the expensive prime chuck I used turned out stringy. My son bought Jamie Oliver cook books when he first learned to cook. Yeah, I cringed and laughed at his chili jam fried rice too. But tonight’s dinner was delicious. The beef cheeks chunks were tender, melt in the mouth yum. I will definitely make it again. I would like to add a little salt but do not know when. Jamie explained not to add when marinading. Can it be added while braising in the oven or should I add after I take it out of the oven? Thank you for a great recipe.

There’s no boundaries in most of the recipes. You can make original recipes without perverting them and calling whatever you ended up with “my expression”.

The usual meat for Beef Bourguignon is called "Paleron" in french and we picked this one for a reason. "Paleron" meat tends to discard a special type of gelatin in the sauce. That's why you don't just pick "any" meat for that dish. That is by no mean the classic recipe even tho it looks and probably taste amazing.

I used to be neutral towards this guy, ya know just a common tv chef similar to Gordon Ramsay or Heston Blumenthal. But after watching for longer I can see that Gordon, Heston, Marco Pierre White, they all love food, they research, they try to get as close as possible to original recipes and authentic flavors. Most of the recent Jamie’s videos I’ve seen are just “I’m gonna show you my version of this dish” [throws together some abomination that has nothing to do with what he claims to be making]. He claims to bring food closer to people, but he just ends up perverting it, oversimplifying something that’s not very complicated in the first place. That’s why how I’m more on a dislike side rather than neutral.

Vegetables are cheap as hell, and cooking doesn’t have to take long. Majority of people eat unhealthily because of either laziness or lack of knowledge of cooking and ingredients. That’s what he’s aiming to educate people on. The “healthy” food that costs a lot is all the organic shite and specialist products but those aren’t the only options for cheap, healthy ingredients

The heat is going to evaporate the alcohol, which will leave the meat with so much flavor and no alcohol, so don't worry about it.
