Hey Chef Tom, just a little tip on smashing the garlic into a paste. It works a lot better if you sprinkle it with salt before smearing it with the knife. Especially when you’re adding salt into the sauce as well.
Love the recipe! One tip for removing skin from fish; slide you knife under the skin, hold the knife steady, then pull the skin towards you. Easy as pie!
Wow. These were great. Added blackening seasoning and got a little char on them. Didn’t do the aoli, just some Kewpie Japanese Mayo (yes I’m a fan of Sam the cooking guy.) Will definitely be doing these again. Thanks for the great ideas. As usual
Looks like a great burger. Considering Sockeye is arguably the best tasting salmon, I'd think 1/2 the seasoning and sauce would suffice. Sockeye season is close here so I'll have to give this a go.
When making salmon Burgers one may encounter some problems on the way. Watching this I know it is professional and sophisticated. I wish I could make them that way.

If I had to guess it either came from Sam's Club, or our local grocery store (Kroger/Dillons). He specifically used sockeye salmon, which has that characteristic bright color. Happy cooking! -Chef Britt

I would also use a touch of Fin Feather to help make the garlic a paste, and reinforce the seasoning relationship between the aioli and the patty.

I would use one egg white as a binder. Would help hold together without adding a flavor if it was slightly beaten. What do you think chef?
