    Carinthian speck has a rich history and is part of the culinary heritage of the Alpine region.     Preparation recipe: for 4 to 6 people
    INGREDIENTS: (Dough)
    400 g plain flour (2/3 pasta flour and 1/3 normal flour)
    1 egg
    salt
    1 tablespoon of oil
    hot water
    INGREDIENTS: (For filling)
    500 g of potatoes.
    250 g of breadcrumbs
    finely chopped leeks
    mint, basil, pepper, salt
    APPROACH:
    To prepare the dough, mix all the ingredients and let them stand for an hour at room temperature.
    Push the boiled potatoes through a grater and add the other ingredients. Mix well.
    Roll out the dough using a rolling pin on a lightly floured work surface to a thickness of approximately 1 cm. Use a round cutter to cut out wheels (diameter about 10-12 cm). Put the filling on one side of the wheel and then fold it up. Crumple them with your fingers so that the dough comes together well. At one end of the skewers, we start folding the dough, pull it up a little and fold it over. We continue like this until we have decorated the entire edge of the pasta.

    Bring a large pot of salted water to a boil and cook the pasta for approximately 12-15 minutes. We take them out using a sieve scoop, put them on a plate and cover them with melted butter.

    Ďakujem za recept. Viem presne ako fantastický chutia. Pracovala som v Korutánsku a tam som si na nich vždy pochutnala. Spravím už tento týždeň podľa receptu. Škoda, že pán šéfkuchár nerozpráva po nemecky. Bolo by to dokonalé.👍
