Recipe: ⅓ cup water ⅔ cup sugar 2 ripe but firm Bartlett or Bosc pears (8 ounces each), peeled, halved, and cored ⅔ cup heavy cream Salt Add water to 12-inch cast-iron skillet, then pour sugar into center of skillet (don't let it hit skillet's sides). Gently stir sugar with clean spatula to moisten it thoroughly. Bring to boil over medium heat and cook, stirring occasionally, until sugar is completely dissolved and liquid is bubbling, about 2 minutes. Add pears to skillet cut side down, cover, and cook until almost tender (a fork inserted into center of pears meets slight resistance), 10 to 15 minutes, reducing heat as needed to prevent caramel from getting too dark. Uncover, reduce heat to medium-low, and continue to cook until sauce is golden brown and cut sides of pears are beginning to brown, about 3 minutes. Pour cream around pears and cook, shaking skillet occasionally, until sauce is smooth and deep caramel color and cut sides of pears are golden brown, 3 to 5 minutes. Transfer pears cut side up to serving platter and season sauce with salt to taste. Spoon sauce over pears. Serve.
❤❤ This is even better with vanilla added to it; specifically, toasted vanilla bean, the way my grandmother used to make it. With or without vanilla, this is a quick, yet elegant dessert.
Made this tonight. I can't believe how the pears tasted just like some fried bananas that I recently had at a Brazilian steak house. Seriously, if my eyes were closed I would have thought I was eat those fried bananas. The pears I cooked had a bit more browning than the video and I used the Bosc variety. This is a ten out of ten recipe, my guests loved it and it was so easy.
I recently read that some people can't acknowledge fruit as desert. Apple pie al a mode. Cherry pie with whipped cream. And now, this delight. Maybe fresh fruit on its own may seem skimpy to some, but I love it. And fruit is a key component to many desserts. So take that, fruit skeptics. With a banana split.:)
I made this tonight with a splash of my vanilla and it was a big hit! The Carmel was a little anemic but I just need to make it a few more times and not rush the Carmel sauce. Oh and I forgot the salt but honestly it wasn't missed - I want to try this with apples! This is a new recipe in the rotation 😊

O M G this is one of the simplest recipes but so incredibly delicious! They type whose taste makes you think you've spent hours to make! Another keeper from ATK! Note: I used both Bosc and Barlett. The bartlett had so much more flavor - they weren't too hard per say - they were the tiniest bit softer than the bosc but oh my the flavor!!
I've made these a few time since I watch this to use my Cosco box of pears. We keep ending up with extra caramel so, I caramelize bananas in a little butter and put in the leftover caramel and a little vanilla the next day. This is a win.
Does anyone know what lid that is that she used on that pan? I searched the pan listed in her description and it doesn’t come with a lid. That brand doesn’t make a lid like that either. Anyone have any idea?
Julia, we LOVE you and your vids, but I don't think you quite sold that first bite, LOL. The barely suppressed grimace was total Vitameatavegamin vibes 😂😂

Oxford also provides both pronunciations in reference, so your statement of "getting it wrong" can only be interpreted as cherry picking. "kärməl" is most likely a mistake in pronunciation that propagated long enough in a region to work its way into common usage. Key takeaway is that people understand the reference(even if etymology says you got it wrong a bit harder than the other guy).

How much vanilla, liquid or bean…?
@@HowdIEvenGetHere Start with a small amount and keep adding until you feel like the aroma is good.
Perfect fall dessert!
I used to do these at work to top salad, but in a port wine reduction and crumbled goat cheese after to top. so AMAZING ❤
Off to the store I go to buy pears, heavy cream and sugar! Thank you, Julia!

Looks very delicious
Hello Julia. Thank you for sharing this Pear desert recipe am looking forward to make it.
Looks so good. I can't wait to make it.

Thanks, I have a pear tree, and didn't know what to do. Too many 😋
Can hardly wait to try this!
I’ll make it
My Mom used to make pears with cream cheese sauce.
Yours looks delicious too.
I love pears! They're the forgotten fruit!
I’m super excited to make this. Going out to get some pears!
Yummy 🤤
You made it looks easy to make. I will be trying this. Looks so yummy
Beautiful recipe. I make this and I add dried cranberries to the caramel and then serve it over arugula. Absolutely delicious. Thank you for sharing❤
Pears are one of the few fruits I can eat, (long story) so thank you so much for this recipe. It looks delicious. I will definitely try it.

Thanks that is going to be a side dish I am making for Christmas dinner
I've been eating a ton of pears lately... and now I'll be eating even more 😆👍
Looks good.
Yummy
I’ve been wanting a recipe for my canned pears. I will try this;may add raisins.
Decadent! Can't wait to try this with some ginger cake or vanilla ice cream 😊
Yummy would you make any recipe different than everything with Punkin cans?
Yumm😋
Wow that's looks amazing, and by the way what pan is that?
She has a link under the description to buy that pan.
@@cindyms.1237 That's great thanks a lot👍
This looks great! I'm wondering if granulated stevia or truvia would work in place of sugar?
That shot near the end was like some caramekkake 😂
I'm glad she pronounces "caramel" with the middle 'a' silent. Banana has a silent middle 'a' as well.
I would have thought you'd cook the pears on the non-cut side in the pan as well.
Any thoughts on whether coconut cream would sub well for the cow's milk cream? This looks delightful!
i think i might have to go straight back to the grocery store a second time... just made the apple crumble a few few days ago
What can you eat this with so the rest of the sauce gets used?
🔥🔥🔥🔥🔥🔥🎂🔥🔥🔥🔥🔥🔥
👨🏼🍳🤤
Would that recipe work with apples as well? Because certain times of the year we have a lot of apples.
This looks yummy, but hmm....thinkin i might get my caramel sauce from pre-made caramel sauce in the can! #lovefoodbutImlazy 😀

i got the same impression... but I think it is because she got a surprise by how hot the bite was. I think she probably burned her mouth...
Great recipe but my pears didn’t get as soft, should I have cooked it on a low flame?
Definitely need some crushed pralines and a dollop of vanilla ice cream but great for recovering alcoholics.
Is this made with eating pears or cooking pears?
Ca-RAH-mel
Clean spatula? That's what I've been doing wrong! ;-)
noice
If you boil the sugar too long..it turns rock hard !
Editing feels funny.
2/3 cup of sugar is a ridiculous amount for 2 pears.
Julia, please. It’s pronounced CAR-A-MEL. Carmel is a city in California.
I've done the same with "Apples 🍎🍏".
I usually use "Granny Smith or Bria crisp".
Try it out.

Maybe this is obvious, but why do you have to wash the pear if it's entirely peeled? You

Pet peeve, car a mel. Not carmel.
Pet peeve, gatekeeping pronunciation and getting it wrong. From the Oxford Languages pronunciation guide: "kärməl". Sorry Erb.
