Why is it that almost every dish trinis cook, sugar is added? There is no need to add sugar to roti dough. Same with the doubles- sugar in the Channa, sugar in the flour for the Bara. Can anyone explain the nutritional value of adding sugar which is a contributor to many ailments in the human body?
Not just Trinidad, at bakeries too. small amounts of sugar added to flour with yeast or leavening agents allows for fermentation and makes the dough lighter. some people use a tablespoon of vinegar. also. I guess sugar in other foods will be as per taste. Peace out!
