There are certainly many many more flowers that one can eat. I dry my hibiscus flowers for tea, squash flowers are good, onion and dandelion are tasty as well. This year my nasturtium died early in the season due to extremely high rains. Rose petals are the best among all, usually they are cured in honey or syrup to make gul-qand and rose water is well known for its properties.
I have a couple culinary sage plants. I use way more of the flowers than the leaves. One I grow just for flowers. Look good, attract bees, and are a great garnish for chicken salad and the like. Sweet and a more gentle sage flavor
We LOVE broccoli flowers! My nephew eats them everyday after the bees have a go at them! It's a nice treat and it's fun to have color show up every once in a while. It's so hot here I can't seem to grow anything but the flowers even in early spring! I agree that flowers should b eaten more widely as a food- Amanda

Note that most are not herbs or veg that you have highlighted.

I love borage...you can eat everything from this plant. In northern Italy, they use borage for ravioli filling.

There are non-edible marigold varieties, namely Tagetes, commonly called French Marigold. The edible ones are the Calendula varieties.

I just harvested two orange russian tomatoes and their great. They look great. taste great. You should try them out when you get the chance.

No not really it depends on what part you are harvesting look at potato flowers the top part is poison but the tubers are good to eat so it depends
Nope. Certain vegetables like Asparagus, Potatoes (or pretty much any nightshade) have toxic flowers.
