How to Make Red Bean ‪Mooncakes for the Mid-Autumn Festival!

  • Mooncake, or yuebing, is a quintessential food for the Mid-Autumn Festival. Because of its roundness, it symbolizes family reunion and togetherness. ‬‬‬The Mid-Autumn Festival is celebrated on the 15th day of the 8th month of the lunar calendar.
    Red Bean ‪Mooncake Written Recipe: cicili.tv/diy-...
    Makes 12 (4.4-ounce) moon cakes
    Prep Time: 3 hours and 30 minutes
    Cook Time: 30 minutes
    Special equipment:
    4.4-ounce mooncake mold set (available online or in Chinese supermarkets)
    2 large baking trays, lined with parchment paper
    Plastic wrap
    Mist spray bottle, filled with water
    Small pastry brush
    2 wire cooling racks
    For the dough:
    3/4 cup golden syrup (available online; honey is a great substitute)
    6 tablespoons peanut oil
    1 teaspoon food-grade lye water (available in Chinese supermarkets)
    2 1/2 cups sifted all-purpose flour
    For the filling:
    2 1/2 pounds fine sweetened red bean paste (see Note)
    1/4 cup peanut oil
    For the egg wash:
    1 egg yolk
    1 tablespoon water

    Many of you have this question on the replacement of lye water, so here's an option. You can bake 1 tablespoon of baking soda in the oven under 250 degrees F for 1 hour. After 1 hour, the baking soda will shrink to about 1 teaspoon. Then mix in 3 tablespoons of water. There you got yourself a substitute for lye water.

      Hey Cici, I had a question. So I made this exact recipe as close as possible. I think it turned out pretty well, but it perhaps they are slightly undercooked? In any case, when I took a bite of the cake, I could but notice a slightly warm sensation in my mouth. Could this possibly be from the lye water? I have never cooked with lye water and I was wondering if it is safe.

    I just wanted to tell you that I made your recipe and it was sooooo good! I have tried a couple of other recipes, and something just didn't seem right. Your dough works very well, and is easy to work with. I used just one bag of red bean paste to make several red bean mooncake. I used the same dough for three other flavors: nuts, date & walnut, and pineapple! The last three I made up the recipes for the fillings just using intuition and what I thought would taste good. What fun! Thank you so much for a wonderful tutorial!

    Thank you Cici for such an easy to follow video with interesting history as a bonus! I’ve just followed your video and for a first attempt they look amazing! Some patterns disappeared so am thinking I may not have pressed hard enough on the mold. My husband is Chinese and has said he doesn’t know anyone who has made mooncakes before!     Cicii thank you for the recipe! But i have a question can you really just use any kind of oil? And what to do if you don't have alkaline water? Is there a substitute for it?

      Golden syrup is an inverted sugar syrup. It is available in all Chinese supermarkets or on Amazon. You could also replace it with honey. Happy baking! ☺️

    Can I make dough 1 or 2 days ahead n freeze or refrigerate? Secondly, is it OK to use maple syrup instead of golden? Or honey maybe?

      You could rest the dough in the refrigerator for 1 day. I probably wouldn't do it for 2 days. Honey is a great substitute. Its aroma is amazing on mooncakes.

      Hi Linsey! Mine was 125g (4.4 oz). The ratio of filling to dough is usually between 2:1 and 3:1. The mooncake mold I used is for 4.4-ounce mooncakes, so I measure out 2.6 ounces of filling and 1.8 ounces of dough for each mooncake. You can change the proportion as you wish, as long as the total amount fits your mold. There are more tips here cicili.tv/red-bean-%E2%80%AAmooncake/

    I'm wondering how you get the whole egg yokes in there after watching you make these!
    My favorites are the non-traditional ones. When I lived in Singapore, I used to buy banana, strawberry, melon and mango flavored ones. They had an uncooked skin (well at least not golden), that was soft and flexible.
    I actually dislike the ones with yokes inside, but I don't mind the lotus paste.

      Thank you for sharing your favorite mooncake fillings with me! My mooncake mode is for 4.4 ounces mooncakes. To put an egg yolk inside, you will have to measure the egg yolk first. If it's 1 ounce, then you could make the red bean paste to be 2 ounces, and crust to be 1.4 ounces. First wrap the egg yolk into the filling. Then wrap the filling into the crust ball. Then follow the same procedure as the video. :)

    Is there any substitute I can use for the lye water?
    It's not available here in Australia (or is hard to get) because it's considered a poison.

      merinsan You could try 1 teaspoon of baking soda with 4 teaspoons of water mixture. However, the color of the mooncakes won't turn as brown.

      Take some baking soda and bake it at 150°C for an hour. Let it cool and mix one part baked baking soda with four parts water. Use as you would lye water. The mooncakes brown nicely using this substitute.

    While this has nothing to do with traditional tastes or this excellent traditional recipe - where it seems the Chinese like all of their pastries rather sweet ;-) I wish they had a recipe for spicier (Sichuan or Hunan) style mooncake and various steamed baozi - as a spicy bean baozi would be glorious! - and a great healthy lunch or snack ;-)

      You can bake 1 tablespoon of baking soda in the oven under 250 degrees F for 1 hour. After 1 hour, the baking soda will shrink to about 1 teaspoon. Then mix in 3 tablespoons of water. There you got yourself a substitute for lye water.

    Hi I have a question can I maybe use sesame oil instead of peanut oil since I dont have any peanut oil at home? I was wondering what the flavor would be if i substituted it with sesame oil?

      funnygummy 5, You could substitute with any light flavor oil like avocado oil, extra light olive oil, soybean oil, or canola oil. Sesame oil has a strong flavor. Unless you are going for that ”sesame oil flavor mooncakes” I wouldn't suggest that. ☺️

      @@CiCiLi because I saw some other recipes using cooking oil for their mooncake dough? I dont know if that will work as a substitute for mooncakes though:(( reply ASAP when you can please since I'm going to be making some red bean mooncakes today and it's like 4 pm here

      Yes, you can totally replace golden syrup with honey. Although the taste and texture are a bit different, but it's still very delicious.
