I love casseroles, too! Like, cut up root veggies, bake 45 minutes, then add chicken drums or sausage, bake 45 minutes more (you add olive oil, salt, black pepper and foil and any dense veggies, like potato, you microwave it for 5 minutes before adding to the 9x13). I also love making stir frys and soups, yum yum yum! You hit this one out of the park, Julia! I love any recipe that includes fresh veggies bcz of how good they are for us and no one likes to get bored eating the same thing all the time. I always invent a recipe of my own after watching one of your videos... =)

Don't know exactly why, but I'm obsessed with casseroles! I think maybe it's the combination of flavors and textures and the endless possibilities. Anyway, thank you for inspiring me to make this Casserole Week at my house!
I also made the loaded beef enchilada casserole. Since it’s just my husband me, I divided this recipe into two pans. Baked one and froze the other. So, so good!
I started using this exact recipe last summer when I had an abundance of zucchini from my garden..... we love it and it’s actually a really refreshing lighter casserole.
At the Dollar tree they have these packets of fried onions and jalapenos as well as tri color tortilla strips and won ton strips. They add a nice touch to the tops of some of these casseroles
my husband and I both love zucchini so I can't wait to try that first one but they all look delish! I adore your lil baking dishes too. they are so cute. happy easter! 🐇

So are you chopping it up and then salting it? Never heard of this but if it'll make zucchini less soggy in baked dishes I'm all for it.
