I love that type of short ribs, I've always grilled or broiled them. And, yes, I've been playing with baking soda in the marinade to help tenderizing the meat. That looks delicious! Thanks Flo. For those in the US! That cut of short rib is not the usual for us..this cut is called "flanken style" short rib and I don't usually find that cut in most grocery stores but the Asian markets will have it! (It's used in Korean cooking very often) 😊😊
I'm in the USA and the few teeny tiny Asian marts do not sell meat. They barely see fresh vegetables. Of course there is normal fat short ribs available. Is there a way to make this recipe with those?

I'd definatky have to tweak this recipe a bit because I'm on a very low carb diet for medical reasons. But the cornstarch I could use xantham gum and the sugar I could replace with stevia and the oyster sauce I could really limit or replace with fish sauce. I'm not sure I could get this chili's in my area, but I'm sure jalepenos or sweet/bell pepper would work fine especially since I likely couldn't handle the thai chili's or jalepenos level of heat anyway

if/when you add baking soda to the marinade, don't marinate longer than a couple of hours as it would turn your meat to mush or weird tasting.

Oh I love these flanken style short ribs; I normally grill or pan sear. Unfortunately, they are harder to find here and are quite pricey.
